I'm glad you're feeling a bit better and hope you continue to improve.
k I'm fit as a fiddle...if that fiddle had a warped neck, cracked back and frayed strings, but still!

but I don't enjoy the big ones because they just always seem hard and meaty not juicy enough
Two words: Farmer's Market. Tomatoes from the store are picked before they are ripe, and allowed to "ripen" after. That doesn't really ripen them, it just reddens them, and they are far less than desirable. Home grown, vine ripened is what you really want. I can sit down with a big old home grown beafsteak tomato and a shaker of salt and be a happy camper.

I have no issue with mushy tomatoes. Those get scalded, peeled, and popped in a BIG old stock pot and turned into homemade tomato sauce...and ketchup...and stuff!

Tonight I'm baking a chicken breast. I'm thinking maybe green beans to go with. OR I may slice it very thin and stir-fry with a teriyaki sauce. I do have a package of frozen Asian veggie mix.

There's something about them being on the vine that just improves, well, everything!
Whatever we have it will be beside a huge bowl of green beans!

OK so we rustled up some stuff and we're having a weird combo of green beans, chicken and bacon (in that order).
This time of year sucks. It's great for garden fresh food, but we slow way down on testing food and dishes. And spend more time preserving, which I hate because pressure cookers are like the Devil hissing on your stovetop that might blow the roof to bits at any given second.
Damn pressure cookers. :angryfire:

1 bruce 1 1 bruce 1 Stovetop pressure cookers kind of scare me. I always envision my kitchen looking like a bomb went off. Boom! and food is everywhere. And I'd have to scrape the ceiling. We have an electric pressure cooker that I use often. For some reason, it doesn't bother me, although I still won't leave the kitchen while it's on. My pressure canner can't be used on our glasstop stove; it won't come to pressure....something to do with its very rounded bottom (I feel its pain; my bottom is very rounded, too). So when I need to do something in the pressure canner, I do it on the grill outside. Works.

Mamanyt1953 Mamanyt1953 My father and I used to walk out to the garden with a shaker of salt, sit in the tomato patch and have at it. Those were tomatoes! Glad you're feeling better.

Not sure about dinner tonight. Rick had soup and dogs last night; I had two dogs. I may get a ham slice out of the freezer to plop on the grill.

I really need to remember to get the fixin's for Texas Hash!

:yess::crackup::flail: I am SO IN TOUCH!

Tonight...um...dunno. What I do know is that tomorrow and Monday I'll be cleaning for one of our inspections, and last night, in an effort to get a little ahead of that game, I cleaned my oven. It is immaculate. However, this means that from now until Tuesday (inspection day), whatever I eat will be stove top or microwave.

Spent the week mostly eating the whole Cajun roasted chicken and big mac and cheese casserole from last weekend. Finally made something new and fresh today...well kind of new...it is more chicken, but thighs instead of the whole bird, and different seasoning/sauce.

Asian-glazed chicken thigh, herbed couscous steamed in chicken stock, and steamed broccoli with butter/lemon drizzle.

Leftover lasagna, green beans, salad with tomatoes from the garden, and key lime pie to finish.

I can hear The Spouse in the kitchen drooling on the cinnamon bread I just took out of the oven. Grrr. There better not be any teeth marks in it when I go in; it’s meant for French toast in the morning!

I wish we could grill; it’s so much easier. But the air quality is nudging from “unhealthy” to “very unhealthy” because of the fires in this part of Oregon. The thought of sitting by the grill while wearing an N95 mask isn’t very appealing.

Oh, yum! My kind of meal!

Teeth marks :flail:
If you find them and confront him, don't let him tell you he was chewing it for a friend because I tried that once and it did not work. :bawling:

Stay safe, Tobermory Tobermory .

You know what he’ll do. He’ll blame the cats! Like I’d ever believe that those precious innocent furry bundles of love would get on the counter, much less eat any of our food. Snort.

Thanks for the good wishes. Right now, it’s just dangerous air quality where I live. People really are walking around with masks.

We baked loaves of bread one night, stored them in a cabinet then (running late) grabbed our dogs and ran for an agility lesson.
Halfway there we realized that our athletic cat could easily open these cabinets and would probably fling bread everywhere for all cats to enjoy.
We didn't care about the bread but didn't want anyone getting sick or something so we called a neighbor and they ran over (they have a key) and let themselves in to see safe bread with gleamy eyed cats eyeing the cabinets!!!!! Lovable brats =)

I'm glad there's no real threat for now aside from air, but very poor air quality can be bad for you. Glad you're staying in and hopefully they get this tragedy under control =(

Ms. Pepe loves fresh bread. Bootser always loved real butter. After Bootser ate a stick of butter that I had put out on the counter to soften and Pepe mauled an entire loaf of bread, I learned to keep stuff in the microwave for storage. Since finding them with tooth marks, even potatoes are in the pantry closet. The cats are not starving. I swear. No matter what they tell you.

We are having chicken thighs for dinner tonight. I'll probably do them in the air fryer.

Leftover angel hair pasta with sun dried tomatoes, artichoke hearts and asparagus in marinara sauce. (I can't take the credit, it was from a yummy Italian restaurant.)

Spaghetti. Rick says he's starving for spaghetti. I don't have any in the freezer, though, so I got out a jar of sauce. He is not amused.

(I know, I know, it's time to make some spaghetti sauce for the freezer!)
