I saw a recipe in the Relish section of our newspaper for ravioli with roasted zucchini, summer squash, pepper, mushroom, and cherry tomatoes, with fresh spinach. I can't make it tonight, but I may try it this weekend. It really looked good. There's another one with tortellini, kielbasa, frozen peas, and shredded cheese. The recipe calls for heavy cream, but I can play around with it and try to lighten up the fat and calories a bit. Something else to try with kielbasa; I tend to keep kielbasa in the freezer for quick meals.

Anyway, tonight, Rick is dying for a can of LaChoy chow mein and he bought some on Monday when we grabbed groceries. I don't like the stuff, but he does. We keep a couple Lean Cuisine meals in the freezer, so that when he wants something I don't want, I can fall back on them. And since we have some stuff we have to do tonight and don't have a lot of time, that will work.

Me, too!

Tonight...dunno. Maybe fried egg sandwich. We'll see. I haven't even thought about it. This afternoon was a bit wild, and I wasn't sure I'd ever get here, and now I'm running behind. Something very, very fast.

I would kill for an egg roll and a cup of hot and sour soup right now. The only decent Chinese delivery place here moved to the next town over, which is a bit bigger. The one that remains is very indifferent. The food is OK, but it never gets to you really hot.

We went out for lunch - I had a crispy chicken sandwich, so I'm just having veggies tonight, steamed broccoli and cauliflower.

Cut up chicken pieces and some stir fry veggies in a fry pan, a little hot sauce, seasoned salt and pepper for some life.
I just texted a friend I got that recipe from. If I can't find it, they will!
(Side note: Always check your texts before sending as I almost asked them if they had "the recipe for stuffed croissant thongs".
I meant to say "stuffed croissant things", lol, WOW, that text could go in like a billion different directions!) :p

Tonight was really stupid, we had the usual stuff for everyone else and we got leftovers =(

~ I just siizzled a large portion of salmon in olive oil with brussel sprouts , leeks, red potato and carrot. Rice with green onion & garlic . ♨
That sounds divine, except I'm horribly allergic to salmon =( Boo me.
I imagine this could be adulterated...chicken or whatever.

Also, rice and green onions are amazing. We make/serve this up constantly as a side, it's wonderful and goes so well with so many things and so many sauces!

I'm badgering the living crap out of my closest neighbor. They have a recipe for a really amazing kale/potato soup with sausage in a cream sauce. They make this soup and share with us (we do things on their property they don't always have time to do and thank us with food! :thumbsup:), and I turn into a rabid wolverine with a large bone when this soup arrives. This soup is awesome and I'm not a "soup person"...I find soup to be a fine appetizer or side but not a meal but this soup is outstanding.
I must badger the recipe away to share.
For veggies, I would probably opt to add some kind of meatless sausage? I don't eat meatless "meat" stuff but I'm sure adjustments could be made to suit everyone!

I hodge-podged leftovers. Mixed together mac'n cheese, southern green beans, and the last of the herbed carrot puree soup...made a "new" soup. There was also half a pork chop leftover, so I cubed that as a soup topping.
I'm intrigued (and suddenly hungry)! Soup toppings can make or break a soup and this sounds really good.
You say you hodge-podged leftovers but this sounds like a very creative and food-intuitive way to combine things!!! Was it good?

Yes, delicious. Very thick and hearty. I just had bits and pieces of leftovers from the weekend...was going to reheat as separate items...but got lazy and thought they'd make a good mix. Worked well. I can never usually recreate things that turn out well. Because "what's on hand".

We will burgers on the grill. They are venison burgers with Bacon/Onion seasoning. The meat was processed at a processing center and has added fat to make it tender and juicy. They are wonderful. For sides, we will have corn on the cobb and baked beans.

HAH! I cadged a ride to the store today, so tonight I'm making hunky noodles. All that talk of green onions got me going. Hunky noodles are simply egg noodles with sliced green onion, sour cream and cottage cheese stirred in (salt and pepper, of course!). I know, I know, but I'm one of those rare people who actually LIKES cottage cheese. And just to simplify things, I'm going to brown ground beef and stir that in, as well. It ends up very like a stroganoff. Heat a can of green beans, and I'm done!

Yesterday, I made a quick loaf of a batter bread (no knead) in a round 8-inch cake pan. Rick sliced it horizontally and then we filled it with lettuce, tomatoes, all kinds of deli meats (roast beef, hard salami, turkey, and some roasted ham), and some slices of baby Swiss and Cajun Cheddar from our local cheesemaker. I wrapped it in foil and then baked it about 20 minutes, long enough for the cheeses to really melt. We call it the Big Sandwich and it's delicious. It's been part of our New Year's Eve thing since our son was a child; whenever we were home on NYE, the Big Sandwich was part of dinner. So that, along with crab-stuffed mushrooms and wings done in the air fryer, was our dinner and munchies last night. Dessert for Rick was still more cheesecake and some cookies. And yes, we ate in bed while watching movies. (Bed is already stripped down and I put fresh sheets on)

So today, I threw a small pork roast in the crock pot with the canned sauerkraut given to us by our BIL. We'll have it over mashed potatoes. Supper will be leftovers from yesterday. I'd like to have the fridge cleaned out by tonight. Tomorrow is a new day and a new year!

Aw thanks!!! But don't thank me, thank the website since yours truly has a recipe card box that's gone from "full" to "explosion imminent" and I can't locate the recipe...grrr!!!!!
I am thinking green beans were added, too.
The beautiful thing about a recipe that calls for random veggies is you can substitute!!!
I wonder how these would be, meatless, for our vegetarian friends if the cream of chicken soup was substituted with cream of mushroom and it was all veggies, no meat.
If there are any vegetarians out there who like to cook, try 'em out and let me know if they're any good!

I like cottage cheese too. I usually eat it plain or with hot sauce.
