LTS3 LTS3 It's not any of those. It's in the most current Yankee. "Caramelized Onion Mac and Cheese". I'll post the recipe, once I've tried it, later on this week. I tried to find it online, but can't. There are also some decadent-sounding chowders in the same issues. We love good chowders.

A frozen pizza for dinner tonight. I'm in no mood to cook.

It will be "raid the freezer" for as much as I can stand for a while. I discovered some home made Canadian Bacon from last January! It wasn't as bad as might be expected, but I have to keep working all that stuff away, or I'll have to throw it out. Tonight might be a couple of slices of frozen scrapple with some frozen veggies.

Last night I had leftovers from my neighbor's Xmas brunch. She always makes doggie bags.
Tonight spinach tortellini with tomato basil marinara sauce over spinach salad. Dark chocolate almond cups and honeycrisp apple for dessert.

Chicken cacciatore with penne - chicken thighs, carrot, celery, onion, mushrooms, tomato paste, red vermouth. Simmer for about 35 minutes, ladle over penne. Wine from the other night. Sure will be glad when I have a working refrigerator again, foraging in the picnic coolers is getting real old.

tons of Greyere,
That is one of my favorite cheeses! But so expensive.

Wellington they brought for their main dish was actually vegan
What is that?

Microwave. I didn't have an oven in the college dorm.
Probably better in the oven.

I asked 2 people for ketchup but never got it. So I heated up some tomato soup and dipped the fries in that.
They sound clueless. No dressing for the salad and no ketchup for the fries?!!!

Lunch: Veggie Sammich
Dinner: Huge Dinner Plate Salad, Last night I had Taco Salad.

Lari Lari I am confused...how do you do a vegan Wellington? Although I cannot eat ALL vegan, there are a lot of vegan dishes that I very much like, so I try to do 3-4 meatless, vegan meals a week.

Tonight was a beef patty with gravy on pasta. I'll finish off the brisket tonight in a sandwich, along with what it left of the casserole. And more hot fruit.

M maggiedemi I looked at Gruyere at the grocery store. $9.79 for 5 ounces. I need 8 ounces (and probably more bc Dear Richard likes a cheesy mac and cheese). Nope. We went out to our local cheesemaker and bought a 20-ounce wheel of baby Swiss for $8.00.

Tonight I'm making a huge stockpot of beef pot pie (kids and Grands coming today). Applesauce. Wilted lettuce. The Grands want the pot pie and that's it. Dessert will be the second tiramisu cheesecake, a crustless peanut butter pie, and the PF white coconut cake. Plenty of Christmas cookies and such, too.

Although not the same situation as yours there are many of us who have been through something similar so I bet you will get a lot of suggestions here. For instance, non-dairy ice cream for starters, soup, yogurt, apple sauce and scrambled eggs, (regular or vegan).

A lot of Vegan recipes seem to replace the meat with mushrooms.
Including the vegetarian lasagna I made yesterday. which I'm having again tonight with salad, and possible garlic toast.

kinda like my last supper since i get my teeth yanked out tommorrow morning with a new set of dentures to replace the teeth
Good luck. :heartshape:
