Thanks! We went out to eat in a restaurant that has private huts. It's the closest I've done to indoor restaurant dining since the start of the pandemic. We got each other clothing since the second anniversary gift is cotton, so a nice pair of jeans for my husband and a light zip up hoodie for me. It was low key, but Tuesday, so it's fine.Happy Anniversary!
The cake looks amazing!! Please describe it!!Today is my fifth wedding anniversary! It was such a beautiful day. We walked down the aisle together to "Time Machine" from "Safety Not Guaranteed." We had walked from one building--the one with the pretty stairs--into the other building, so I had shoes on. Because it hurts me to walk in shoes on carpet, he stopped me at the door, bent down, and slipped off my shoes. During the ceremony, he kept saying, "I do!" instead of the lines he was meant to be saying. It caused a small wave of giggles each time, but it was just so cute! After the part came in the ceremony, he said, "Finally! I have been waiting for that forever." The officiant who married us said that the love he and I have for each other touched her so much that she did not feel right charging us a fee. The closeup of the plate is the one belonging to my then 7-year-old niece. We picked out books for everyone to take with them. They also got chopsticks (except my niece who did not get any), and they all got to pick out and take a crystal with them. We had a sit-down dinner party with dim sum and some American Chinese dishes from our favorite local place who made it all special for us. (I forgot to iron the tablecloth!)
More than 12 years together and I am still wildly in love with this man!

Omg. Just, omg.The cake was a pumpkin chai carrot cake with layers of cream cheese buttercream, frosted in ermine buttercream, and covered in a vanilla marshmallow fondant. The top tier had toasted pecans in it because my husband likes them in his carrot cake. It sounds like a lot, but it all went beautifully together. (Even though he did not have my recipe, he came pretty close to it just using my son's description. I was rather impressed!)

If anyone wants the recipe, I can type it up and send it in a message. It really is amazing, if I say so myself! He put less spice in it than I do mine, but you can obviously go either way with it. It has been a while since I made it, but I might make it for Christmas at my mother-in-law's house this year. My neighbor's church had a bake sale raffle a couple of years back, and I made this (sans fondant and fancy decoration) for her to donate. She said it was the highest earner and the winner raved about it the following Sunday.If more wedding cakes were flavored like that; more people might eat them!
The last few weddings I've been to; most people aren't excited for the cake and it seemed like they had a lot left over.

I just found a local woman who make chai caramels and they were amazing! I might be on a kick here.

We had a lot left because we only had seven guests. Everyone took home leftovers, though! I even sent some with the photographer t take to her wife and son.
They were fabulous!! They also had a sea salt caramel one that was amazing! My Grandpa is turning 100 this winter so my mom and I were looking at options for favors this weekend at a fair. (For a smallish family party; but we still want it nice.) I'm thinking these will be perfect. They are unique but also supporting a small local, woman owned business.Chai caramels?! I might have to try to make those! Also, it makes me wonder how a caramel ganache would work as a layer in this cake and ice it in either the ermine or the cream cheese buttercream. Maybe when I make it, I will make one layer like that to try it.
