Last night was hot dogs broiled in the toaster oven on toasted buns. Sides were homemade potato salad with celery, red onion, sweet red pepper, and capers, homemade dressing of mayo, mustard, sugar and ACV. Also coleslaw. Store didn't have my preferred brand, which is Marie's so I had bought Marzetti's. Himself says it's O.K. I prefer Marie's.

There's some potato salad left so I'm thinking lunch will be potato salad and hard cooked egg, nicely plated on some tender red lettuce from my friend's garden.

It is storming fiercely, so I'm thinking comfort food. Tomato soup make with milk, and a grilled cheese sandwich sounds about right. This has been going on for about three hours. There's either a BIG line moving though, or a big storm has stalled out on top of us.

Lunch was on the stovetop- Aldi Chipotle Veggie burger all crumbled up, spinach, swiss chard, bok choy from the garden, white onion, green bell pepper, yellow bell pepper cooked up in olive oil with habanero sauce. Yummy! Those veggie burgers taste like sausage when they are crumbled up in tiny bits.

Dinner was the same thing mostly, but with a Mexican twist, used salsa instead of habanero sauce, and added refried beans, rice, spices, shredded cheese, tortilla chips, taco sauce.

Last night's dinner was tuna steak with lime juice, soy sauce, olive oil rubbed on, done under the oven's broiler,. Side was three-bean salad - canellini and dark red beans from cans plus Italian green beans with diced red onion. Himself had a chocolate chip cookie, I had vanilla ice cream with sliced strawberries that had been tossed with a little sugar.

I'm thinking pizza tonight. But that means I have to make dough and I really don't feel like a dough day today. Maybe a vegetarian stir-fry over fried brown rice. That might work, too. And it's easier.

I took out some country-style spare ribs from the freezer yesterday to thaw in the fridge. Found a recipe from Paul Kirk's Championship Barbecue cookbook for Maple Leaf Country-Style Ribs, so that's the menu for Saturday night.

I made a black bean salad with onion,celery,chopped sweet pepper oregano and an olive oil and vinegar dressing.
That sounds right up my alley! :thumbsup:

I haven't been in much of a cooking mood the last few nights so easy dinners here - big bowl of veggie salad one night, quinoa burger with swiss cheese/slices of veggies another and scrambled eggs with chopped veggies yesterday. Not sure about tonight but since I bought the fixins' for my pasta casserole I might make it today or else over the weekend.

Black beans didn't used to be a favorite of mine but I thought I'd give them another try...they were delicious!I made them like I'd fix a 3 or 4 bean salad and I 'm a believer now.Next thing you know I'll be making burgers with them!

I'd never tried black beans until I became vegetarian, and they quickly became a favourite. And black bean burgers are delicious. :yummy:

The creamy corn mac and cheese was meh :ohwell: The feta cheese crumbles didn't melt well plus was salty. I don't think basil would have helped in any way. Definitely not making this again. I have leftovers to take for lunch next week so the entire dish isn't going to waste.

Hmm, yeah, looking at the recipe---the only cheese was feta? Chevre would be awesome, I think, but feta doesn't melt well, not sure who came up with that one. Feta as a garnish, if it were made primarily with another cheese, yeah, that would be ok. Maybe the leftovers can be pepped up a bit by melting a little cheddar into it.

Yes, the recipe only called for feta cheese crumbles, half added to the pot to melt into the pasta and half as a garnish. The salty feta plus the "heavily salted" water for the pasta made for a very salty dish :barfgreen: Still looking for an easy stove top mac and cheese recipe that gets nice and gooey...

I made this in the Instant Pot, but I don't see why it wouldn't turn out the same made any other way. It was very good and extremely gooey and not at all a diet food, lol. Use home-shredded cheddar because the anti-caking stuff they put in pre-shredded cheese makes it grainy when melted.

Making chicken paprikash again tonight. This time I'm adding potatoes and mushrooms. I added 2 whole potatoes and the usual amount of chicken so now I'm wondering if I should have halved the chicken or doubled the sauce or what. I guess I'll find out in 20 minutes!
