That sounds right up my alley!I made a black bean salad with onion,celery,chopped sweet pepper oregano and an olive oil and vinegar dressing.
Black beans didn't used to be a favorite of mine but I thought I'd give them another try...they were delicious!I made them like I'd fix a 3 or 4 bean salad and I 'm a believer now.Next thing you know I'll be making burgers with them!That sounds right up my alley!
I haven't been in much of a cooking mood the last few nights so easy dinners here - big bowl of veggie salad one night, quinoa burger with swiss cheese/slices of veggies another and scrambled eggs with chopped veggies yesterday. Not sure about tonight but since I bought the fixins' for my pasta casserole I might make it today or else over the weekend.

Hmm, yeah, looking at the recipe---the only cheese was feta? Chevre would be awesome, I think, but feta doesn't melt well, not sure who came up with that one. Feta as a garnish, if it were made primarily with another cheese, yeah, that would be ok. Maybe the leftovers can be pepped up a bit by melting a little cheddar into it.The creamy corn mac and cheese was meh
