You can be diabetic friendly and still have calories and good blood sugar maintenance. And something to consider, if you don't have diabetes and are having drops, could the same thing be happening to your husband?
I looked again at your expected dinner, and you'd do a lot better dumping the rice and adding more meat. While your calories for the meal are in line for a 1300 day if you ate three meals of similar caloric values a day, that cup of rice (even if brown) is a blood sugar disaster. On top of that, being diabetic friendly would actually be 6 meals a day, and that would also sustain your sugar levels in addition to your husband's.
