We are going to make frittatas in the air fryer tonight.
mmmm......that Stouffer's Vegetable Lasagna is so good!For dinner I'm having Stouffer's Vegetable Lasagna with canned french cut green beans. The lasagna is good and I feel like I need something green to eat at least once a day. With my old arthritic joints it is too hard to use fresh vegetables. When I do buy the fresh they end up going bad because I don't feel like messing with them. Canned and frozen is much easier for me.

I have a bag of cat-head shaped pasta; a GF saw it and bought it for me.....just because. Every time somebody sees something "cat" they automatically think I'm going to love it. I need to get that used, too, and will probably make macaroni salad or something like that out of it. Cat-head mac and cheese....boy, that just sounds scrumptious, doesn't it?I was digging around in the pantry today and found a bag of alphabet pasta. I really should use it, SO...I have two bags of sauce thawing. I'll cook the whole bag, sauce it, and save the leftovers for tomorrow. And maybe the next day. Not sure how much there will be.
I hope you like the Morningstar Buffalo Chik patties. I must say that they are my least favorite of the Morningstar products. Maybe they will taste better cooked on a grill. muffy , we have a package of Morningstar Buffalo Chik patties in the freezer. We'll probably do them on the grill for Saturday night supper.
Anyway, I think we're going for ice cream tonight. I could use a strawberry lemonade gelato, preferably a large one! And if we do go, that will be my supper.

I've only been vegetarian 8 1/2 years, so I had my share of BLTs in the past. But I don't miss the bacon at all now. Even when I used to eat it, I could almost visualize the fat clogging my arteries.
My favourite sandwich these days is one with tomato, baby spinach, red onion, mashed avocado and cheese. So yummy. I use dairy cheese, but vegan cheese would probably be ok too.

Boy, that sounds good. I will have to get some chickpeas next time I go to the store. I use chickpeas a lot in salads. You chickpea sandwich really sounds good. I need something different to put on my bagels.That garbanzo cake sounds interesting, but I'd have to use the white chickpeas, as the green patty isn't very appetizing to me.
Another yummy sandwich using chickpeas, is to simply mash them up and add mayo, celery, onion, etc. Very reminiscent of tuna salad. In fact, I made them for a few friends once, and one kept asking "is this tuna?".

I'm not crazy about any of the store bought veggie patties, and prefer the flavour of my own, but I wish I could find a way to keep them from falling apart. The one that works best for me includes both egg and cheese, and though I'm not vegan, it seems a little too "non veggie" for me.
I really like the Burger King veggie burger, and whenever I have it, I look closely at it to ensure it isn't beef, that's how real it seems to me. Course it might just be that I don't remember what a beef burger is like anymore.
