Tuna salad sandwiches. But on purpose, NOT because I forgot to thaw anything. I'm just feeling tuna-ish.

I had Hickory BBQ Riblets from Morning Star Farms (vegetarian) and some potato salad. It was so good.

I was digging around in the pantry today and found a bag of alphabet pasta. I really should use it, SO...I have two bags of sauce thawing. I'll cook the whole bag, sauce it, and save the leftovers for tomorrow. And maybe the next day. Not sure how much there will be.

For dinner I'm having Stouffer's Vegetable Lasagna with canned french cut green beans. The lasagna is good and I feel like I need something green to eat at least once a day. With my old arthritic joints it is too hard to use fresh vegetables. When I do buy the fresh they end up going bad because I don't feel like messing with them. Canned and frozen is much easier for me.

We had a simple dinner of coleslaw and vegan burger patties from Costco. Quite tasty, and very different from what we usually eat.

i think i'll make a couple fried eggs and put them on one of the burger buns, some raw carrot pieces with ranch salad dressing as a dip, and a carob brownie.

Pushylady: I have found that most of the vegetarian and vegan "meat" are very tasty. Coscto also sells the Morning Star sausages which I think are very good. My mother and B/L who are meat eaters ate them all the time.

I have a bag of cat-head shaped pasta; a GF saw it and bought it for me.....just because. Every time somebody sees something "cat" they automatically think I'm going to love it. :lol: I need to get that used, too, and will probably make macaroni salad or something like that out of it. Cat-head mac and cheese....boy, that just sounds scrumptious, doesn't it?

muffy muffy , we have a package of Morningstar Buffalo Chik patties in the freezer. We'll probably do them on the grill for Saturday night supper.

Anyway, I think we're going for ice cream tonight. I could use a strawberry lemonade gelato, preferably a large one! And if we do go, that will be my supper.

Junk again today. Today is my moms Birthday; went to the Cemetery this afternoon. In honor of her, I then got an ice cream. Came home, had some cheese, crackers, hard salami, and a glass of scotch... the drink was to honor her.

Have you always been vegetarian, muffy muffy ? I've only been vegetarian 8 1/2 years, so I had my share of BLTs in the past. But I don't miss the bacon at all now. Even when I used to eat it, I could almost visualize the fat clogging my arteries.

My favourite sandwich these days is one with tomato, baby spinach, red onion, mashed avocado and cheese. So yummy. I use dairy cheese, but vegan cheese would probably be ok too.

Uh-oh. Well, we'll find out. We will grill them (weather permitting) and we'll have a salad to go with.

That garbanzo cake sounds interesting, but I'd have to use the white chickpeas, as the green patty isn't very appetizing to me. ;)

Another yummy sandwich using chickpeas, is to simply mash them up and add mayo, celery, onion, etc. Very reminiscent of tuna salad. In fact, I made them for a few friends once, and one kept asking "is this tuna?".

We don't have Morningstar products in Canada, but I have read good reviews on them.

I'm not crazy about any of the store bought veggie patties, and prefer the flavour of my own, but I wish I could find a way to keep them from falling apart. The one that works best for me includes both egg and cheese, and though I'm not vegan, it seems a little too "non veggie" for me.

I really like the Burger King veggie burger, and whenever I have it, I look closely at it to ensure it isn't beef, that's how real it seems to me. Course it might just be that I don't remember what a beef burger is like anymore. :)

You chickpea sandwich really sounds good. I need something different to put on my bagels.
I also like Burger King's veggie burger. I get them all the time. Sometimes I wonder if it is really veggie and not meat.

I'm not vegetarian but I absolutely adore chickpeas and hummus. I used to hate both. But I use them in salad too with a little pepper since they can be bland.

I'm not sure what's for dinner tonight... probably a salad.

UMMMMM...I dunno. Maybe...I dunno. NOTHING sound good but a pizza, and that isn't in the budget right now. I MUST replace the printer's ink cartridges. Both black and color are low.
