Breakfast for dinner for me, scrambled eggs w/veggies and a toasted cinnamon raisin bagel. DH had a turkey burger sandwich w/swiss cheese and tater tots. Honeycrisp apple for dessert.
Lunch was eggs scrambled with red and green peppers and onions. Dinner will be Korean meatballs with barbecue sauce and rice. No, there is nothing "authentically" Korean about them. That's too much to ask for mass-produced meals. However, they are tasty, and it is filling. And under 500 calories, which cannot be discounted!
I took a container of crock pot beans out of the freezer, along with a small package of ground beef. Thinking of sloppy Joes with the crock pot beans. And a bit of cole slaw....I love cole slaw.
Lunch was biscuits and gravy. Dinner will be...something. Um. Can't remember what's in there, but I remember that the veggie is seasoned green beans!
Tomorrow, I decided to fix myself a modified Easter Dinner for one. I bought a ham steak, a sweet potato wrapped for the microwave, and a bag of Bird's Eye crispy, breaded green beans. OH, and turtle cookies for dessert! I've already baked the cookies, and the rest will come together in 10 minutes tomorrow.
Windowpanes tonight. Also called Eggs in a Nest, I think.
Rick starts prepping for his colonoscopy tomorrow and he doesn't want a lot of stuff in his stomach. Windowpanes will work.
We will enjoy our Easter dinner next weekend.
