I switched to veganism for ethical and environmental reasons, I was very comfortable with this style of eating, but my bowels were reacting badly to such amounts of legumes and fiber. I was getting to the point where I was consuming 70/80 grams of fiber a day, which also contributed to reduced absorption of other nutrients, such as iron. I was also concerned about my intake of calcium, selenium, iodine and omega-3 fatty acids.Welcome to the forum. I'm looking forward to your post. I became a vegetarian in 1959. Tonight I had a stir fry and a cucumber salad.

That looks so good. Is it complicated to make. I've only had tofu once and didn't love it, but want to try it again.View attachment 443233

Tkanks! It's not as tough as it seems - when it comes to tofu, try a marinated one - I'm sure it will taste betterThat looks so good. Is it complicated to make. I've only had tofu once and didn't love it, but want to try it again.
Yeah, I think you have to marinate it to get it crispy. That's the key, getting it crispy, not spongy.when it comes to tofu, try a marinated one - I'm sure it will taste better
