Spatchcocked and seasoned a whole chicken last night to throw into the Foodi Grill this afternoon. Making potato salad and sauteing a zucchini and a small yellow squash in garlic butter with Lemon Trinidad seasoning. I have some pineapple rings in the fridge that I need to get used, so I'm thinking about making a small pineapple upside down cake. Yum! Mint tea to wash it all down.
