While I'm not overly fond of Spam, I agree that it's underrated. Rick's mom used to make creamed Spam on toast points and he's always loved the stuff. I make it for him at times, although most of time, I'll make it with ham instead of Spam. But there's nothing wrong with Spam for breakfast instead of bacon or sausage. That Spam pie looks good,

and I'm going to try it. I think Rick would really like it.
I also think that Pinterest gets a bad rap for their recipes. I can honestly say that I've never tried a bad recipe from Pinterest; in fact, I've gotten a lot of really good cookie recipes from there. And some excellent bread recipes as well. My go-to sand tarts recipe and now my roll and cut sugar cookie recipe both came from Pinterest.
But I digress (sorry) Dinner tonight? A frozen cauliflower pizza (which scares me, to be honest).
Our corned beef and cabbage was excellent last night. I braised everything in the oven and didn't add potatoes to the mix. Instead I made colcannon (Rick just loves colcannon). I'm really looking forward to tomorrow's dinner! Reubens! I took some sauerkraut out of the freezer and I'll get up tomorrow morning and make a couple loaves of swirled rye bread. Yum!
