While I'm not overly fond of Spam, I agree that it's underrated. Rick's mom used to make creamed Spam on toast points and he's always loved the stuff. I make it for him at times, although most of time, I'll make it with ham instead of Spam. But there's nothing wrong with Spam for breakfast instead of bacon or sausage. That Spam pie looks good, Kat0121 Kat0121 and I'm going to try it. I think Rick would really like it.

I also think that Pinterest gets a bad rap for their recipes. I can honestly say that I've never tried a bad recipe from Pinterest; in fact, I've gotten a lot of really good cookie recipes from there. And some excellent bread recipes as well. My go-to sand tarts recipe and now my roll and cut sugar cookie recipe both came from Pinterest.

But I digress (sorry) Dinner tonight? A frozen cauliflower pizza (which scares me, to be honest).

Our corned beef and cabbage was excellent last night. I braised everything in the oven and didn't add potatoes to the mix. Instead I made colcannon (Rick just loves colcannon). I'm really looking forward to tomorrow's dinner! Reubens! :drool: I took some sauerkraut out of the freezer and I'll get up tomorrow morning and make a couple loaves of swirled rye bread. Yum!

The pie is really good. My DD isn't the biggest fan of onions or eggs and even she really liked it.

I have some bacon wrapped sirloins that I'm going to cook tonight with some veggies on the side I think. The cats will happily help me eat the steak.

Yummy, what kind of cheese do you use?

I fixed a one pan mashup of ground beef, green beans, black beans, diced tomatoes, some garlic etc. It turned out great 👍
This time I used Aldi's brand...Clancy's I think...it's a knockoff of Velveeta.We really like it as well as the name brand,but it's half the price!It really depends what I have on hand .And you?Do you have a favorite cheese to use?

When my son was small,one of his favorite dinners was sweet and sour spam over rice with chow mein noodles.Ah...memories!
Tonight's dinner will be grilled polish sausage,boiled potatoes and green beans.Bought some German whole grain mustard at Aldi's today...can't wait to try it!

We have one of those in the freezer, but it's just cheese, might have to add some toppings.

I don't think I ever had Velveeta on grilled cheese. I've had it in mac & cheese.

For dinner I had that leftover pasta casserole that had lentils, green peas, cheese, breadcrumbs. I added cilantro on top, it was really good!

Furballsmom Furballsmom I love, love, love Velveeta!! Growing up my mother would not buy it,
saying it "was not cheese". She would buy the 2 pound block of Kraft American, I don't
know if that is available anymore. When I moved out for the first time, I bought a 2 pound
block of Velveeta, sooo good.

Yesterday I had McDonalds fries and a McDouble for brunch
McDouble and green beans for dinner
snacked on grapes and cashews throughout the day

Not certain about tonight, maybe a Stouffer's meal

You have a great sense of humor, cracks me up. :flail:

Monday was leftover chili (I made a huge pot), Tuesday was garden vegetable soup with wheat oyster crackers, Wednesday was quinoa burger on roll w/hummus, tomato, spinach leaves & swiss cheese. Tonight I'll either have broccoli & cauliflower with garbanzo cake or scrambled eggs with veggies mixed in.

For dinner I had my famous salad plate- lettuce, tomato, cucumber, onion, red bell pepper, radishes, sunflower seeds, cashews, lentils, croutons, coconut flakes, jalapenos, diced peaches, dried cherries, crystalized ginger, granola, mozzarella cheese, Thousand Island dressing. The crystalized ginger was really good, I would try that again! The dried cherries were okay, but I prefer dried cranberries. The granola was too sweet without milk, so I'll probably save that as cereal.

Yesterday I had a 2 ham salad sandwiches, grapes, and cashews.
My appetite is off because of the stress so I'm going to start having
at least one Ensure a day for awhile. Nothing sounds good except

I'ts really good. My DH found the recipe online years ago and asked me to make it for him.
