What's For Dinner? - 2019

    I'll be brining pork chops later on to be thrown on the grill. A quick veggie (cabbage, onion, carrots, asparagus, a fresh yellow pepper, sliced, and a chopped tomato...it's what in the fridge) stir-fry to go with. I don't have a recipe for stir-fry; I just throw in whatever I have on hand. And strawberry shortcake for dessert.

    I don't actually make shortcake. Rick's mom always made a Betty Crocker recipe for sweet muffins and she used that for her strawberry shortcake. That's what I do, too, because that's how Rick likes it. With vanilla ice cream, of course! :)

    Nope, one small can of the crushed pineapple, drained well and stirred in. Gives it a bit of a lua flaire!

    I'm iffy about tonight, but it is SO hot outside, and I have cold boiled eggs in the fridge...I may make egg salad, or I may just peel the darned things and munch.

    Tonight we're gonna clean up the leftover chili,tomato salsa,shredded lettuce and some cheese and have that over half a big baked potato,and maybe some sliced cukes.

    I am having vegetable Ramen soup, the kind that comes in a package.
    My ulcer is acting up and I don't know what else to eat. I tried to eat a tomato sandwich for lunch but it just hurt to much.

    Try something bland like some pasta with butter or some rice and broth.

    As @neely posted, no rush. When I finally decided I was going to become vegetarian, I slowly started eating more meatless meals. After about 10 months I went 99% vegetarian, but would still eat canned tuna. But finally gave that up within a year.

    I don't want to derail this thread, too much, but I think it depends on your reasons for going vegetarian, as to how fast or easy the transition will be. Since I never really liked meat, it was easy to give up. I think for people who enjoy the taste of meat, it's harder. Also, it helps, or hinders, depending on how supportive other family members are.

    Maybe @maggiedemi, if you like, you could start a new thread on "Becoming Vegetarian" where we could post ideas, recipes, etc. BTW, I picked that thread title specifically, as it's the name of a vegetarian book I highly recommend. But you can name your thread anything you want. ;)

    I've heard of, but never tried, using pineapple instead of the meat in chili, so I guess it would be the same idea. Must Google recipes ...

    Yeah, I have been eating a lot of pasta and bread I have some broth I can eat. I need to take more Zantac and leave the Aleve alone.

    I'm sorry, @muffy I hope you're feeling better soon. I've heard that yogurt is good for an ulcer.

    Sloppy joes are on our menu tonight. With a salad.

    @muffy Yes, probiotics are definitely good as well as foods high in fiber, i.e. they lower the amount of acid as well as calm any bloating or pain. Do you like sweet potatoes? That may be another option to eat. I'm sure you know this but fatty foods, dairy and spicy foods are the worst for ulcers. Thinking of you and hope you feel better soon. :crossfingers:

    Thanks, Winchester and Neely,

    I take a large dose of probiotics every day but they don't seem to help anything. I did not know that dairy food was bad for ulcers. That does not give me much to eat. I am vegetarian and have IBS. Anything high fiber gives me diarrheal. That leaves out a lot of vegetables. The only things I can think of to eat is cereal, noodles, rice and yogurt.

    Can you try one of the alternatives, e.g. almond, coconut, soy, rice or oat milk? Even lactose free milk. :idea:

    We're meeting friends for dinner at a little, and I mean little, Italian restaurant tonight. It's the best kind, i.e. family owned. DH is super psyched because he loves one of the specialty items on the menu. I have to say I'm really looking forward to going too. Best part is I always take home leftovers. :wink:

    I had a Subway sub on their new jalapeno roll. I loved it, jalapenos baked right into the roll. :yummy: I bet @orange&white could make these.

    If probiotics don't help, have you ever tried digestive enzymes?
    I don't envy anyone with IBS. Terrible thing to live with :(

    My fridge is full of food for lunches and dinner this week :yess: I made one pasta dish yesterday, tortellini with sausage and pureed squash. Today was pasta with spicy sausage and greens.
