I'm thinking a burger. With fries. Frozen fries, but fries. Well, I WILL cook the frozen fries, they're much tastier that way. The burning question is, will I bake them (far, far simpler), or will I drag out the deep frier, and actually fry the darned things...but there will be cheese. And onions.

And, uhm, for dinner tonight I thawed out a serving of leftover tomato rotini and broccoli.

Still had some leftover potatoes and onions,mushrooms and about 10 stalks of asparagus,so I threw it all together and made a frittata,sauteed a couple of chicken breasts,tossed together a salad and called it good....and it really was!

The burger did well last night. I baked the stupid fries. They were ok. BUT there was more meat in that package than I thought, so I'm repeating last night tonight.

I hope they’re good. I found the recipe on AP. It’s a combo of slow cooking and then baking for 15-20 minutes as the last step.
For more streamlined chicken enchiladas, use a slow cooker

Today was kinda cloudy,rainy and cool,so I thought comfort food time.Macaroni and cheese,grilled polish sausage and peas.

Bone in, skin on chicken thighs rubbed with barbecue sauce and baked / broiled in toaster oven, basmati rice, local asparagus. I'm having peach ice cream for dessert, don't know what himself will choose.

Well, they were okay. I’ve never used corn tortillas and they didn’t hold up well for me; they got a little mushy. I probably won’t make this recipe again unless I do some tweaks.

Pintrist has a lot of slow cooker taco/enchilada recipes. They look pretty good.

Last night was a quesadilla on a whole wheat tortilla with cheddar cheese and jalapenos. Yum.
