I got an attitude last night about the chicken. Two attitudes really. The chicken was marinated so they couldn't have any. This did not go over well. They sat next to me and I got the double evil eye. :rolleyes2: :lol:

Today, I defrosted a chicken leg quarter that is not seasoned. I will roast that and we will share it. I will poke around in the freezer and find a veggie to have with my share.

Winchester Winchester I agree about store bought strawberries. They are rarely good. I don't know how they can look so ripe and delicious and then end up so flavorless. It's so disappointing. They also don't last. They get moldy super fast. At least they do here. :doh:

Tonite's dinner was really simple.I made sweet and sour spam,complete with onion,green pepper and pineapple chunks,and we had it and the sauce over leftover rice.Brought back memories from years ago and it was really good!

Tonight was Premio sweet and hot sausage broiled in the toaster oven, sauteed onion and sweet pepper, served over jasmine rice. A sprinkle of reheated leftover bacon on top for embellishment.

Beans and corn have complementary amino acids. Eaten together, complete protein. Himself and I are both very fond of black beans and corn with some diced onion and sweet red pepper. Serve cold with a splash of salad dressing. Stir in some Goya sazon and heat for a side dish.

Tonight is an egg salad sandwich
How do you make your egg salad? Do you dice it up or smash it all together? My mom smashes it all together with green olives until the whole thing is yellow instead of white.

Breakfast: Target Good & Gather Vanilla Bean granola with diced up watermelon and 2% cow milk

Lunch: Veggie sammich on Aldi Turano Italian Panini bread toasted, mayo, red jalapeno hot sauce, raw cabbage, tomato, onion, 1 hard boiled egg, sharp cheese. The cabbage was so good on a sammich! Really crunchy though, maybe I should have cut it up instead of leaving whole.

Dinner: Huge dinner plate salad with red french dressing. This dressing is much better mixed with mayo. Way too sweet on it's own.

It doesn't help with the flavor (and I agree that storebought strawberries are terrible) but if you wash them in vinegar water right when you get them home, they last a good long time. I guess it kills the mild spores or something. I was skeptical but it works, and doesn't make them taste like vinegar!

I opened a pack of sandwich turkey on Sunday, and if I do that I have to eat a sandwich every day until it's used up, or the turkey will go to waste. So since I had leftovers for work lunch, I have to eat a sandwich for dinner, lol. I'll make 2 at the same time and have one for tomorrow's work lunch. I put: turkey, sliced sharp cheddar (American cheese is not good), mayo, dijon mustard, sliced tomatoes, a sprinkle of Tajin, and a handful of salad spring mix on Sarah Lee Artesano golden wheat bread.

I recently started using Duke's mayo instead of the big brands like Hellman's, and it's sooo much better! Nothing beats homemade mayo, though, but it has to be made fresh every time and that's a pain.

oĵ has omega 3's in it usually derived from fish, anchovies in partidular. when i was in the hospital they gave me oj that had vegetarian on the carton. i have never seen that in a store.
Yeah, I was looking at some Omega nut butters and they all had fish in them! Weird. There must be some vegetarian form of omegas they could add. :headscratch:

Pretty much the same as your Mom, as I don't want any chunks in my egg salad sandwich. So totally smashed, mixed with some mayo and finely chopped onion. I'll add finely chopped celery, as well, if I have any. Sometimes I'll add a pinch of salt and sprinkle of black pepper.

I made 2 egg sandwiches yesterday, so unless I eat the 2nd one for lunch, I'll be having it for dinner tonight.

i heard years ago that dukes mayo is made by hellmam's. i don"t know if
it is true.

Hellmann's is made by Unilever. Duke's is made by Sauer Brands. Both are good but I grew up on Hellmann's so that's what I usually use. Blue Plate is also good. Southern Living did a taste test/ranking of major brands. The Southern Living Guide to Mayonnaise Brands

Just Mayo is very good if anyone is looking for a vegan option. They have a roasted garlic version that is excellent but harder to find. At least by me it is.

And I guess it is one of the big brands, too, but for some reason I had never heard of it before I saw it recommended in a recipe.

I do like Just Mayo and Vegenaise but they don't have quite the same flavor/mouthfeel.

But really, if you've never tried making your own, give it a try. It's amazing.

It is a big brand but I think it's mostly available in the south. I have made my own before too. I think people who don't like mayo would if they tried it. Way different than the jarred stuff. Way better I agree.

I think I'll make some corned beef hash and eggs for dinner. I haven't had that in ages. With plenty of hot sauce. :yummy:

Fun fact: Hellman's is only sold east of the Rocky Mountains. The same company makes the exact same mayo but sells it under the Best Food brand west of the Rocky Mountains. Denver, CO is the only place where you can buy both brands.

I have leftover chicken Provencal tonight. I have to remember to pick out the olives :barfgreen:

Thank you for heads-up about the strawberries, W Willowy . I never heard of that.

Our Giant started carrying Duke's within the past year or so. Until then I'd never heard of it. It is quite good, but they don't sell a lower-fat version. Rick likes Kraft mayo and I don't care one way or another, so Kraft it is (mayo doesn't thrill me like mustard :paperbag:). Mom used to make mayo and it was good; I tried making it one time and liked it. But I never did it again.

Tonight's dinner will be baked penne with roasted vegetables. I'm going to try it in the Foodi Grill. With a bit of coleslaw.

What kind of hot sauce? You know I'm gonna get excited at the mention of it.

Breakfast: Target Good & Gather vanilla almond granola, diced up small green apple, 2% cow milk

Lunch: Veggie Sammich on the last 2 slices of Aldi Turano Italian Panini bread toasted, mayo, red french, red jalapeno hot sauce, sharp cheese, hard boiled egg, swiss chard, tomato, onion, cauliflower. The cauliflower was so good on a sammich!

Dinner: Knorr Rice Sides Cheddar Broccoli packet- a mix of rice & vermicelli pasta. I finally figured out how to cook these correctly so that all the liquid absorbs! Count 3 notches up from Low and put a lid on it. (bring to a boil first) Yay! It was so good.
