Amy's black bean soup
I really like Amy's products. Their burritos are good.

For dinner I had a baked pasta dish. It was spirals with tomato sauce, ricotta cheese, one egg, then shredded cheese on top and baked in the oven. It was really good! I added half a Tablespoon of hot sauce.

I had the last of the one pot chicken and rice.

I'm already planning Christmas dinner. I'm actually going to make it on Sunday since I'll be working on Christmas. It's a slow cooker chicken and wild rice pilaf. I figure I'd use 6 thighs which gives me dinner to reheat for the week and then I can make easy side dishes and whatnot to go with the leftovers. I still have some spiral french fries in the freezer that need to be baked.

There is a recipe for Mustardy Apple Butter Glazed Pork Chops in this issue of Cook's Illustrated
I am really glad you mentioned this and specifically the apple butter, I almost missed it except for that :)

I did mine in the frypan yesterday, and the glaze did slide off a bit but we didn't care. This was really tasty!!

Tilapia, asparagus, sauteed mushrooms, and pistachio pudding

As I mentioned last Friday in "What Three Things" I went to an Asian food market with my sister from a different mother. Among other things we each got a duck (carefully labeled as "headless duck".) She did the usual roast duck. But me? Oh no, that would be too easy. So on Monday I filleted the breasts, cut off the legs, and made stock with the carcass, wings, neck. I rubbed the legs with salt, black pepper, fresh thyme, and refrigerated, turning whenever I remembered them.

Today I soaked them in water for about an hour. Browned the legs, set aside. Sauteed diced carrot and sliced celery for a few minutes. Then added black lentils and tossed until just coated with oil. Returned the duck legs. Added stock. Turned heat to low, covered pot, and simmered for about 45 minutes.

Quite nice. But maybe the glass of Beaujolais Nouveau I had with it influenced my opinion . . .

Dinner was braised duck breasts, potato pancakes, apple sauce, braised carrots, sauteed mushroom caps, pan gravy. Finished off the Beaujolais Nouveau.

Bought 2 hen pheasants today, for Christmas dinner. They're in the refrigerator. Will skin and disjoint on Monday. So wanted to finish off the duck.

Dusted breasts with flour, browned in oil, set aside. Turned down heat, added carrots, garlic, peppercorns. Sauteed for a bit, returned duck breasts to Le Creuset pot. Added red vermouth, quickly clapped lid on pot and shoved in hot oven. Niow have 20 minutes until plating up. Plates are warming. Nothing worse than hot duck on cold plates. Nasty!

Drained potatoes I had shredded and put to soak in cold water. Added beaten egg and a little flour. Started potato cakes frying up. Made one apple's worth of apple sauce. Sauteed 6 mushroom caps in butter, covered pot, let steam.

Nice dinner. I like cooking. Enjoy eating. Cleaning up afterwards? Not so much.
