I do a quick, super simple vegetarian version of a one pot pasta. Cook broccoli and pasta in water till pasta is el dente, or just under, about 7 minutes for penne or rotini. Drain. Return to pot. Then add some jarred pasta sauce and leave on stove till heated through.

The healthier way to cook broccoli is to steam it, but then it would require 2 pots, thus no longer a one pot pasta. ;)

Tonight I took some slow cooker baked beans out of the freezer, so I'm having that.

It'll be a 4-B kinda night tonight.
Burgers (with Bacon), Beans, and a Beer.

What's even more funny is the animals are having Boneless Bison, so I guess it's a 6-B kinda night.

Isn't there frozen broccoli that goes right into the microwave and steams in the bag? Green Giant brand or something?
I've seen broccoli and mixed vegetables (And rice, too) that comes in it's own steam bag, and all you need to do is pop into the microwave for a few minutes then open it up and eat. Very cool idea!

I buy broccoli crowns and steam them a microwave vegetable steamer. Works perfectly and it’s quick and easy to clean.

I just pulled a pizza from the oven and found a cat hair on it. Oh well. I wouldn’t know how to eat food without cat hair. :)

Not sure about tonight. Since I'm making pasta sauce anyway, I may have a small plate of spaghetti with a garlic-Parm yeast roll from the freezer. Then again, I may just have a small bowl of sauce with a garlic-Parm yeast roll.

I'd never thought of steaming broccoli in the microwave. Glad to hear it works. Will definitely be trying it soon, as I just bought more broccoli yesterday.

rubysmama rubysmama You know, I don't even use a jarred sauce sometimes. I'll saute some onion, steam broccoli with a few stick-sliced carrots, and then throw that in with the cooked pasta. Chunk up a couple plum tomatoes and throw them in. Then top it off with a bit of grated Parm (when I have Penzey's Brady Street Cheese Sprinkle, I'll use that instead of Parm). A couple sprinkles of oregano and basil and dinner is served. Sometimes I'll drizzle in a bit of balsamic vinegar, too. It really isn't bad!

Tonight I'm doing a veggie stir-fry (once I get home from the grocery store). Some broccoli, carrots, garlic, onion and celery, 'shrooms, snap peas, a bit of ginger, etc. I make my own stir-fry sauce, nothing exotic. No rice, just the veggies tonight.

That really sounds good. Did you make the veggie burgers yourself?
No, I bought them at the farmer's market from a mushroom vendor - he sells everything "mushrooms." I looked at the package ingredients: roasted mushrooms, sweet & red potatoes, brown rice, red pepper, celery, black beans, onions, carrots, roasted garlic, olive oil, black pepper, sherry vinegar and kosher salt. I sauté green onions and green peppers in a pan then just cook the burgers with them. It takes 10 min. top and tastes great. I will definitely be going back to stock up before winter. ;)

First chili of the season for us tonight. I add some chocolate to take the acid edge off the tomatoes. When I was growing up, my father decreed that soups and stews were not summer fare. It’s just a psychological bump I’ve never stepped over! Odd really because I certainly eat hot meals all summer long. :)
