I do a quick, super simple vegetarian version of a one pot pasta. Cook broccoli and pasta in water till pasta is el dente, or just under, about 7 minutes for penne or rotini. Drain. Return to pot. Then add some jarred pasta sauce and leave on stove till heated through.
The healthier way to cook broccoli is to steam it, but then it would require 2 pots, thus no longer a one pot pasta.
Tonight I took some slow cooker baked beans out of the freezer, so I'm having that.
