Oh, I dunno. Prolly hot dogs. Big shock there. Tomorrow is going to be a FRANTIC day. The pressure washer people come on Monday, so I have to disassemble (NO DISASSEMBLE...#5 ALIVE!) the Secret Feral Shelter, bring it in, scrub it down, take the bedding to the laundry room, move the outside furniture in, AND I have a doctor's appt on Monday, as well, so wash hair, shave hairy bits. I'm thinking hot dogs tomorrow, as well. I'll be too tired to manage much else.

Tonight here, dinner will be grilled cheese on pumpernickel, sweet corn and cucumbers from the farmstand and maybe a piece of Jumble Berry Pie. It is a pie sold at my farmstand, frozen, made locally and has cranberries, blueberries, strawberries and oranges. I bought it in celebration of my mini-vacation.:) Not sure if I will bake it today or later on tonight.

Wow, MamaNYT...you've sure got a busy few days ahead. Hope everything goes well for you!

I'm about to make a double-batch of pizza dough so I can use up the 1/2 jar of remaining pizza sauce I opened last week. Most of the dough is going in the fridge to ferment overnight for pizza and calzones tomorrow.

Tonight, I'll pinch off a few pieces of dough and make a "snacky" dinner of pepperoni rolls.

Hot out of the oven: Pepperoni Rolls (pepperoni and provolone baked in a soft pizza bread dough) with warm pasta sauce for dipping. Wishing I had picked up some lettuce or spinach for a side salad, but this will do. Fresh fruit later for dessert.

Last night, we had to take The Beast to the vet tech for a booster vaccine. We decided to have dinner when we got back home. But when we eventually got home, I didn't feel like cooking or eating (which is almost unheard of, I mean, I eat anything at any time). Rick had a couple Lean Cuisine pizzas. I went with nothing.

Chicken thighs tonight. Done in the oven with some peach halves and home made biscuits. Hasselback potatoes, since I'm going to have the oven on anyway. And I'm thinking of glazed carrots.

Peach pie and vanilla bean ice cream for dessert.

We've done chicken (steamed) with apple, but never peaches. That sounds very very good!

No, I only made the rolls today.

I'm letting the bulk of dough ferment in the fridge overnight. Pizza and calzones tomorrow. They freeze well, so I should end up with 2 weeks of toaster-oven lunches for work.

I mixed some ground pork with seasonings for Italian sausage tomorrow's dishes. That meat also needs a few hours soak up the sausage flavors.

I love this dough recipe (but I use milk instead of milk powder and water). If you like thin-crust, you don't let it rise after rolling. Just roll, add toppings and pop in the oven. Thick-crust, roll and let it rise before topping and baking. It also makes a couple of loaves of French bread instead of pizza. Very versatile.

I added some granulated garlic and Italian seasoning to the dough today for a bit more flavor. :yummy:

Oh, I love calzones! Count me in, too, orange&white orange&white . I'm inviting myself to dinner. What filling are you using? When I make calzones, I make a ham and cheese filling and then a sausage and ricotta filling.

Our dinner last night was good. I made the chicken and biscuits with fresh peach halves. It was Dear Richard's specialty years and years ago when I was in college and working full time; he had to cook or starve. It's a very old Bisquick recipe from Betty Crocker....yes, I still keep Bisquick in the fridge. And sometimes, you eat for memories; it's good for the soul as well as the body. He loved having it last night, even though he's not a big chicken fan. He said it was years since we made it. Instead of the hasselback potatoes, I went with glazed sugar peas.

I don't know about tonight....something quick! I'm tired of parking my butt in front of the stove! Pizza sounds good, to be honest. So does just a salad.

I have Italian sausage and pepperoni, for meats. For cheeses, I have mozzarella, provolone, ricotta, parmesan, and a pre-mixed "pizza" blend. Onion and bell pepper for veg. I'll have to decide whether to make all of the calzones the same, or make different filling combinations in each. The pizza will be a with-everything "Supreme" pie. :)

Right at this moment, "just a salad" does sound good! After all this bread dough, I may pick up salad fixins and eat "just salad" a couple nights this week. I'm feeling a little self-induced vegetable deprivation. :p

orange&white orange&white --I think I'm going to make my Calzone vegetarian. Maybe pineapple, mushroom, onions, green pepper. And sauce on the inside, not on the side! I haven't even made the dough yet! I hope I have time to finish by dinner.

1CatOverTheLine 1CatOverTheLine --When you fly down to Texas for your Calzone, you're gonna need somebody to babysit your 11 cats and your pool, just saying...I can't promise I won't kidnap any of them. Demi was just telling me he needs more friends. :thumbsup:

Dang, I forgot to take my shredded cheese out of the freezer. How long does this take to unthaw? Can I just leave it on the counter to unthaw?....It says Sharp Cheddar Blend. Is that good for Calzones?

Just pop it in the fridge. Frozen cheese gets a little crumbly, so you can crumble it to pieces with your fingers or break it up with a fork.

Cheddar cheese and veggies should be a tasty pocket sandwich, if not strictly Italian. :)

Okay thanks. I'll try the cheddar this time and if it tastes wrong, I'll get shredded Mozzarella for next time. I didn't even think about what kind of cheese to get ahead of time. I remember when I worked at Pizza Hut, they used a combo of white and orange cheese, I think it was mozzarella and cheddar?

Salsa turkey tortilla wraps. It was just ok :dunno: I think next time I'll use ground beef instead of turkey. I'm just not a fan of turkey. The flour tortillas kept falling apart as I was eating. I didn't toast them. Maybe that's why?

We toast them in a clean non oiled skillet for about 10-20 seconds per side, and it seems to do the trick.
We usually use beef but sometimes use chicken, almost always seasoned heavily.
