I made some wheat bread with olive oil and Psyllium.

It was not soft, it was fluffy, very fluffy, like eating a cloud, but still had that perfect resistance and lot of taste.

I took old Italian pizza recipe and adjusted it largely by a feeling.

Best bread seem to come when using cold water, I do use instant yeast, but it works on cold water just fine, surely takes hours to get going, but that also makes more taste.

A little slice of chocolate and almond torte with my house-mates:  one of them celebrating their birthday so cake was compulsory today.

For the past 4 years or so for my brother's Christmas gift I make lots of meals that I freeze in individual containers. I've been cooking for him for the past week. I think I finished last night. The last thing I had was a blue berry muffin last night. I'm having coffee now, but I'm eyeing another blueberry muffin or one of the pineapple coconut muffins.

Salted Caramel Apple Pie Streusel Bars

      Shortbread Crust
  • 1/2 cup (115g) unsalted butter, melted
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup (125g) all-purpose flour
      Apple Filling
  • 2 large apples, peeled and thinly sliced (1/4 inch thick)*
  • 2 Tablespoons all-purpose flour
  • 2 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
      Streusel
  • 1/2 cup (40g) old-fashioned oats
  • 1/3 cup (70g) light or dark brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup (30g) all-purpose flour
  • 1/4 cup (60g) unsalted butter, cold and cubed
Directions:

Pre-heat oven to 300 F and line an 8 by 8 inch pan with tinfoil. Set aside.

For the crust stir the melted butter, sugar, vanilla, and salt in a bowl. Put in the pan and bake for 15 minutes.

For the apple filling stir the sliced apples, flour, sugar, cinnamon, and nutmeg until the apples are covered with the mixture.

For the Streusel combine everything but the butter. Add the butter and cut it with two knives and then stir everything so it looks like crumbs.

When the crust is finished cooking, take it out of the oven and add the Apple Filling and then sprinkle the Stresel over the top. Put it in the oven and cook for 30-40 minutes, and then take it out and cool it off for 20 minutes. Chill in the fridge for at least 2 hours, then drizzle with Caramel Sauce. You can make your own Caramel Sauce, or just buy soem from the store.
