Hubby is bringing me home some kind of smoked delicious meat from the Caveman Kitchen (well known in this area).

Me and nurseangel are having the same thing.  Homemade vegetable soup.  I have also cooked a pear pie.  Hubby is bringing vanilla ice cream when he comes back home tonight and we are having dessert.

Stuffed peppers!! (Stuffed tomatoes for me.)

The stuffing is:
1/2 lb ground beef, sauteed
1/2 lb pork sausage, sauteed
2 cups rice, cooked in beef broth -- this makes a huge difference!!
Garlic and onions, sauteed
A generous helping of Worcestershire sauce
About 1/4 cup of tomato sauce
Dried thyme and parsley
Black pepper
Egg to bind it all together.

I also sprinkled "italian" cheese on top. I'm eating the leftover filling now and it's SO GOOD. I can't wait until they get out of the oven. :yummy:

On Saturday, I did a rotisserie-style chicken in the oven and then I made broth in the pressure cooker from the carcass. Froze most of the chicken meat and all of the broth, but I did leave a bit of meat in the fridge. Last night, I used the cooked chicken to make a quick chicken and noodle casserole for a bit of dinner for me.

Dinner tonight was.....are you ready for this, Lauren??....a handful of White Cheddar Cheez-its!

Speakhandsforme, I haven't had stuffed peppers in a long time. Thanks for mentioning them; I'm going to make some when Rick comes home as he likes them, too.  Your recipe looks delicious. Thanks!
