Pepperoni pizza is on the menu tonight. I'm going to do a stuffed crust pizza.

I went to Mom's Night Out last night and had lobster mac and cheese. It was delicious.

Making an eye of round roast for DH tonight, it's his favorite, along with onion roasted potatoes and salad. Haven't decided what I'll be having yet but it won't be roast.

Pork schnitzel with sauteed mushrooms and onion over rice, with carrots and green peas

Bought a pepperoni pizza at Aldis...they were out of the supreme we usually get,so I sauteed an onion, green pepper and some mushrooms for it and added a little extra cheese.So good!

Instant potatoes aren't what they used to be.

I know! I remember when they were like eating library paste...or, what I imagine library paste to be like!

Lunch was biscuits and sausage gravy. Dinner will be beef stew and combread.

Our homemade pepperoni pizza turned into delivery from our local Papa John's at 7:30 last night when we finally finished up in the kitchen and got our painting stuff put away. Everything was covered in painting sheets from top to bottom, so that Rick could do the ceiling.

I have my kitchen back today, other than giving everything a good cleaning, so I'm going to make a pot of split pea soup with the ham bone and broth from our Easter dinner. Either strawberry muffins, just a sweeter muffin with strawberry preserves inside, or my version of Cheddar bay biscuits. Haven't decided which yet.

Went into the city today and had a late lunch so not sure about dinner but I think it will be garden vegetable soup w/crispy wheat crackers and chocolate/vanilla swirl pudding for me. It was my kids favorite pudding flavor when they were young so I always think of them when I'm eating it. DH wants a turkey burger w/swiss cheese and roasted red pepper hummus sandwich on an onion roll. Honeycrisp apple for dessert.

Last night I had pizza with tofu.

Tonight I had veggy chicken tenders, greens and a piece of cornbread. I left before they served dessert. I came back to my room and I'm on my second glass of wine.

I like the instant mashed potatoes.

We had a late Birthday Brunch Bash: eggs benny, french toast, cheesy hash potatoes, polenta stew, and cakes & pies.
So stuffed.

I took some of my BIL's bratwurst out of the fridge. Thinking of doing them with lots of onions and peppers on the NFG. And a bit of macaroni salad. I'm down to two eggs, so might as well get them used up.

Butternut squash ravioli w/spinach leaves, a little EVOO drizzled on top and a parmesan leek croissant. Honeycrisp apple for dessert.

Had 2 leftover burgers last night,so I made a yummy onion gravy and heated them up in it,served over rice and heated up some green beans.

Lunch was a chicken salad sandwich. Dinner will be my chicken strips, mac and cheese, and corn.

Dinner tonight will be tuna loaves with brown rice and green beans.
I made the first batch of mint tea (meadow tea) from our garden mint yesterday. Very refreshing!

DH is having a roast beef and swiss cheese sandwich on a bagel with the leftover roast I made from the other night, tater tots on the side. I had what seems like a never ending dental appointment so just a large sweet potato, applesauce and pudding for me.
