had mexican food carnitas sopes with rice and beans from my favorite spot they have gigantic portions so i split it in half to have the left over half for my breakfast

My sister stopped by The Olive Garden on the way home from the hospital. I had their delicious salad, minestrone soup (vegan), bread sticks and cheese ravioli. I could only eat a small amount so I brought most of it home. I can get two more meals out of it.

I could not eat yesterday and most of today because I had to have a colonscopy. I'm sure glad that it's over with.

I made pancakes for J and myself.

Two nights ago I had toasted cheese and tomato sandwich, and a piece of watermelon.

Last night was rice and beans, and a cinnamon applesauce cup.

I've been busy and fallen way behind in this thread so won't try to catch up but will mention last night's dinner - veggie flatbread pizza and strawberries for dessert.

I did NOT sleep enough last night. I read that the first times as "carnitas with sloppy rice and beans." Gave me a start, it did.

Last night was a Stouffer's Slow-roasted Steak with Potatoes Bowl-Full. Quite nice. But I am looking forward to actually cooking again. If I had a good bar-height stool for my kitchen, I could manage it.

I haven’t cooked in weeks - it’s just been too hot. But today I got a craving for chicken salad, so tonight (and probably the next few nights) it will be a chicken cashew salad on a croissant.

Cube steak - came out so tender I could cut it with my fork. Sauteed onion and mushrooms, rice, broccoli. Ice cream for dessert, homestyle vanilla and chocolate.

Falafel with broccoli, cauliflower and carrots for me. Taquitos and salad for DH. Strawberries were on sale for only 99 cents a pound so I bought two pounds and we had some for dessert.

Tonight it was canned salmon and macaroni salad, embellished with diced celery and sweet red pepper, sliced black olives, capers, some dried oregano, bound with mayonnaise, garnished with wedges of hard boiled egg.

He had a ham and cheese omelet and some toast with our raspberry jam and I had a cucumber sandwich on toast with a little vidalia onion.

I made up for last night with these tofu skewers and grape, grapefruit, and avocado salad. J didn't want avocado today, but really went for the marinated tofu and grapefruit.

The weather finally cooled off with temps in the low 70's so I made a bowl of lentil vegetable soup for dinner. Strawberries and apple slices for dessert.

Barbequed steak and potatoes...yes, the microwave version. SOMEDAY, I'll be able to stand long enough to cook again, or I'll run across an inexpensive bar stool for the kitchen.

Maybe look on FB Marketplace, Freecycle, Craigslist, etc for an inexpensive bar height stool? I know Target had a bar height stool for about $20 awhile ago. Try Google Shopping: Google Shopping | Find the best prices and places to buy. Type in what you're looking for and then refine the results for price, features, etc.

I have leftovers tonight, bbq pork with polenta and veggies. It's from the subscription and one I won't order again. It's kind of meh. I have two split chicken breasts thawing in the fridge for tomorrow's dinner. Just need to find a recipe for them. Otherwise it's just a sprinkle of Bell's Seasoning over the breasts.

It's been pretty much catch as catch can the last few days as I've been busy with peaches, cucumbers, etc.

Tonight, I'm doing baby back ribs in the NFG. Rick will go up to the garden to grab a few ears of corn. mmmmmm Fresh corn!
