Did she boil it for too long?Is the meat supposed to fall apart? Mom made corned beef once for who knows what reason. We're not Irish. The meat was tough and super salty and just didn't taste very good
I made more sauted eggplant with Parmesan cheese to go with the Shake and Bake chicken. I bought Italian eggplant this time. There weren't any neon eggplants and I know Asian eggplant doesn't work well in non-Asian dishes and I wasn't sure about Dominican eggplant. Regular eggplant is just too big.
It has always been tender any time I’ve made it or eaten it off of friends who made it.
That sounds like a lovely dinner. I love shake and bake chicken.
