Is the meat supposed to fall apart? Mom made corned beef once for who knows what reason. We're not Irish. The meat was tough and super salty and just didn't taste very good :barfgreen:

I made more sauted eggplant with Parmesan cheese to go with the Shake and Bake chicken. I bought Italian eggplant this time. There weren't any neon eggplants and I know Asian eggplant doesn't work well in non-Asian dishes and I wasn't sure about Dominican eggplant. Regular eggplant is just too big.
Did she boil it for too long?
It has always been tender any time I’ve made it or eaten it off of friends who made it.

That sounds like a lovely dinner. I love shake and bake chicken.

Maybe "fall apart" was the wrong description, but I remember it was super tender and you could cut it with a fork. And for the saltiness, Mom used to soak it, then drain it, before putting it in the pot with the veggies.

It was definitely tough. Not sure if mom boiled it for too long or what. She probably did just put the meat directly into the pot from the package. I don't think there were any veggies. Mom had never made corned beef before and who knows what possessed her to make it. Maybe the enticing sale on corned beef at the supermarket for St. Patrick's Day :dunno:

I am assuming it was cooked in a covered pot with liquid, yes? Cooking the corned beef for too short a time is more likely to give a tough result than cooking it too long. That might dry it out but is unlikely to make it tough.

Tonight we has shrimp with rice and the remaining tomato vegetable sauce from last night's cacciatore. Pleasant.

giant food used to have two pickle barrels for dill and kosher pickle back in the 70's. they were the best things i ever ate but they had to quit selling them because they were told it was not sanitary.

i love dill and kosher pickles but once in a while i will have a taste for a sweet plckle.

morning star.has the most delicious products.
Muffy have I got a jar of pickles for you!I made sweet kosher dills.Oh my goodness they are so good!Who knew!

Today I'll be making pork and sauerkraut over mashed potatoes.
I quit eating pork after I held a pot belly pig pet and noticed the darn thing smelt better in the heat than I did!
Pigs are so smart cute and clean that I will never be involved in their demise again. Don't get me wrong though....
they are DELICIOUS
If cats could go vegan I'd be all over that but they were designed as meat eaters so I guess i will continue to be involved in bird
deaths for my beloved cats. I see duck formula for cats but oh my gawd have you ever raised baby ducks into adults?
I think I would starve if ducks were the only option to eat.

I know what you meant, when the meat gets so soft, it's almost like shredded, it kind of comes apart. I get it. :thumbsup:

Breakfast: Target Good & Gather vanilla bean granola, 1 diced green apple, cow milk

Lunch: Veggie sammich on Great Value Honey Wheat toasted, mayo, red jalapeno hot sauce, sharp cheese, swiss chard, tomato, onion, cucumber, black beans. I loved the black beans on the sammich! I had them cold, but I'll try them warmed up next time.

Dinner: Still experimenting with these Knorr Pasta Sides packets. I was wrong, medium was too high heat. It stuck to the bottom and tasted burnt. I will reduce the heat to notch 4 up from Low I think. That's 2 down from medium. It's fun experimenting even though I failed! That's how we learn.

No,I'm sad to say.Hubby grew the cucumbers and I made the pickles,but....you could come pretty close,I think,if you took a jar of kosher dills,drained the juice into a saucepan,heat it up and added sugar to your taste.Let it cool and pour back over the cucumbers in the jar and keep them in the fridge.I usually let mine sit a couple of weeks before I open a jar and give them a try.I have a friend who fell in love with the kool aid pickles she found for sale at a gas station while traveling in Mississippi.They wouldn't tell her how to make them,but she figured it out and she now keeps a gallon jar of them in her fridge.Where there's a will there's a way!

i will give it a try. i heard that the kool aid pickles were good but i have never tried them.

They're actually so simple.Take a jar of dills,pour the juice into a saucepan,add sugar to taste and a packet of cherry kool aid.Pour back over the pickles in the jar and let them sit in the fridge.They'll turn red in color as they absorb the cherry flavor.I was intrigued last year and made a jar,and they were pretty good.

Having to feed a cat meat was one of the reasons it took me so long to adopt a cat. Then finally my life-long love of cats became stronger than my feelings against killing animals for food.

So though I'm vegetarian, I have meat cat food for Ruby. And because of her sensitive digestive system, she eats a vet hypoallergenic novel protein food, which just happens to be duck. That really bothered me a lot at first, and still does, if I'm being honest. But my obligate carnivore pet is my responsibility now, so I have to feed her a food that will keep her digestive system happy.

I saw that rabbit is also good for cats with digestive issues/allergies. Read that most cats don't seem to have allergies to rabbit meat.
