What's For Dinner? - 2019

i'll have chili over a baked (microwaved) potato again. some cantaloupe. and a slice of Russian Pound Cake for dessert, later in the evening!

I just popped some chicken in the oven to roast,and I think I'll fix some buttermilk mashed potatoes and creamed corn.Call it Sunday supper!

Also good on a warm and sunny night.
I also had some salad with mine, and a small apple for dessert.

Since we went to an Italian restaurant with friends last night I had leftover spinach lasagna tonight. I made a spring mix salad with zucchini and green onions on the side. DH bought a pint of Ben & Jerry's coffee, coffee, buzz, buzz ice cream for dessert. You know I had to have a taste just to check out the coffee flavor.

Brown sugar garlic chicken done in the oven, not the slow cooker. I think I have some sweet potato fries to pop into the oven, too

You must try it. I usually just use cheddar, but I had some mozzarella so tried that last night, and as you can see, it melted well.

tonight's dinner will be the last (that's thawed) of the no beans chili, over a baked potato, maybe a slice of tomato with some blue cheese salad dressing drizzled over it, and dessert will be a slice of Russian Pound Cake -- later in the evening.

Tonight is my last supper....of hot dog. I'm going to do a wiener wrap melt with cheese, and lettuce/onion in a flour tortilla. (Don't worry Maggie...it's just the last hot dog! )

No, wait. That’s the cats’ food.

Here’s ours. I haven’t added the curry sauce yet, but the veggies (broccoli, carrots, edamame, and mushrooms) and chicken are ready. Then I just have to make the rice and a salad.

No idea what I'm having tonight, but last night I simply thawed out a serving of minestrone.

What is in minestrone soup? Mom always called it "stone soup" (her English isn't very good) and, for some reason, discouraged us from eating it

I have leftover brown sugar garlic chicken but no more sweet potato fries I only had a handful left in the bag. I can make a pot of rice or quinoa to go with the chicken.

Can't imagine why you wouldn't have been interested in eating a soup with stones in it.

Minestrone is basically vegetables, beans and pasta.

Here's the recipe I make. I use less pasta, though. And use bottled veggie broth instead of canned. And omit the cheese.

I cooked a few potatoes Saturday and just pulled a pint of pork and beans out of the freezer this morning. I'll have the last potato smothered with beans, and maybe make a pan of cheese-cornbread to go with it.

I'm down to lettuce and red onion for salad fixins'....need to shop again soon.
