I had broccoli florets with falafel and DH had a turkey burger with baked potato. We both had the oatmeal chocolate chunk bars I made yesterday for dessert. Half of the pan is already gone, DH really likes dessert. :biggrin:

Tonight will be scrambled eggs and English muffins. Or, I'll throw caution to the wind and just have English muffins slathered in butter and iced with some VERY yummy preserves that are lurking in the fridge. OR, I'll have scrambled eggs and an English muffin for supper, and another English muffin slathered in butter and iced with some VERY yummy preserves that are lurking in the fridge.

Busy day today and an afternoon doctors appointment...we got our second vaccination.So far so good but we are both really tired.Did a bit of grocery shopping and stopped at Sonic for chicken sandwiches,split an order of fries and home we came.
That second vaccine can knock you for a loop. Take care! :hugs:

In the foreseeable future, I will be getting an upright freezer.
We have both a chest freezer and an upright in the basement. We've always had a chest freezer; when my parents passed away, we took their upright and we use it for garden stuff. It's a self-defrost, so we don't have to defrost the thing. That can be a PITB. And bless you for giving your old freezer to your neighbor. :)

We had delivery pizza last night, a stuffed crust with sausage and peppers, which is Rick's favorite. I forgot the blasted 'shrooms. It was good anyway. For tonight, I'm thinking soup and sandwiches. Soup is good for a quick Sat night supper.

I bought more mushrooms (they're on sale a lot !!!) and was going to either make Naan Pizzas or my Mushroom Rice, but I ended up cleaning the kitchen, and now I don't want to mess it up with cutting veggies and cooking. So I took some soup out of the freezer, and will have that, some crackers, and probably an apple for dessert.

My husband has a couple of that brand! He has the chile habanero and the black label reserve chile habanero.
Cool! I have the whole collection- green, red, black, and I think there is a yellowish one.

Yum! I want to make a vegetarian version of that soon.

Breakfast: Great Value plain bagel toasted, 1TB Justin's chocolate hazelnut almond butter, 1TB Skippy natural honey peanut butter, half of a diced Anjou pear on top.

Lunch: Snack plate- Lays Stax flamin hot chips, Dollar General club crackers, medjool dates, dried banana chips, pickles, ground chia/flax, pecans, slivered almonds, cajun cheese curds, 2TB jalapeno cheddar dip, 1TB Justin's chocolate hazelnut almond butter.

Dinner: Leftover veggie bean soup, I added 1/8Tsp spicy fire salt, 1/8Tsp black pepper, 1Tsp El Yucateco red habanero sauce, 1/2TB Grey Poupon mustard, Dollar General club crackers crushed on top. Yummy! I got the seasoning exactly right, love the mustard in it!

I was prepared for some side effects,and even asked the doctor about them...what to do if,etc.I don't think our arms are particularly sore today,and he feels fine.So do I but I'm just cold,so I put on my wool socks,sweats and 2 shirts and I'm good.

Pork tenderloin dusted with oregano, paprika, freshly ground black pepper, and a combination of orange juice, fresh squeezed lime juice, pineapple juice and a little olive oil, then cooked in 400 degree Fahrenheit oven for 25 minutes.

Sides were white rice and microwave steamed asparagus. Also chicken of the woods mushrooms I had foraged, sauteed in butter, and then frozen for just such a use as tonight.

Breakfast: Finished up the Kashi cinnamon shredded wheat cereal, 1/3 cup 2% cow milk. It was ok, probably won't buy again.

Lunch and Dinner: Snack plates. Basically all the same stuff, but I tried out these new fiery chips my brother sent me:

I made this flatbread on Friday for lunch, and since the recipe is for two and I knew my husband wouldn't eat it, I saved it and had the leftover one tonight. I used freeze dried mint instead of fresh mint. I keep some freeze dried herbs around because fresh herbs are so expensive, so I'll only buy them occasionally.

It was an interesting combination, but I actually rather liked it!

What do you think of them? I love Takis. I like the red bag best but purple is just fine. . .
I love them! They are really fiery & I prefer corn chips like these over potato. What is the flavor of the red bag? I've never seen it.
