Killer chicken fajitas. I have made them before and they were okay but this time instead of sautéing the chicken with fresh peppers I used jarred roasted sweet red peppers and what a difference. Their soft spicyness added just the right flavor to the seasoned chicken. Definitely will repeat this meal soon.

Thanks! Because of your post, I took another look at the bag. It was hard to find, but on the back it said Gala!

Breakfast: Aldi Cinnamon Raisin Granola with 1 diced fresh Pear and 2% cow milk. This granola is so yummy! Nice big clusters.

Lunch: Knorr Pasta Sides packet, the Garlic shells one. I added a can of peas and habanero sauce. I had the heat too high and it had a burnt taste. I'll keep practicing.

Dinner: Made a bowl with leftover cabbage veggie soup, 1 piece of crumbled up cornbread, 1 piece of swiss chard, 1 diced up veggie hotdog, habanero sauce. I should have cooked the veggie hotdog & swiss chard on the stove, it didn't taste quite right microwaved. The cornbread was so good and sweet.

Well,last night he chose soup,so he had that and an egg salad sandwich,and I had crackers and peanut buter with mine.Tonight was pizza,so I guess tomorrow I'm cookingIt actually worked quite well as we had a late afternoon vet appointment with our little doxie girl Olivia.

Hot dogs with cheese and oni...oh, let's get real here. What I'm actually having is cheese and onions with a hot dog. The hot dog is just the carrier. I'd probably be just as happy with melted cheese and onions on a piece of toast.

So now a question for you - considering how it was used do I call the previously cooked meat "leftovers" or an "ingredient"?
If you simply reheat the cooked food, it's leftovers. If you use it to make a new dish, it's an ingredient.

Hmmm... "sweet" and "good" in the same sentence? I see yummy sweet desserts, possibly even drizzled with chocolate, in your future. :lol:

I'd probably be just as happy with melted cheese and onions on a piece of toast.
That does sound good. Throw a couple slices of tomato with it, and it would be even better. :yummy:

Here's last night's dinner: I did the potatoes (a white and a sweet potato) for 20 minutes in the FG, then threw the chicken thighs in for 20 minutes while the potatoes were finishing up. While they were doing their thing, I mixed cranberries with maple syrup, reduced it down for a bit of sauce for the chicken, although I ended up spooning a bit of sauce into my potato, too. I made green beans on the stove. You know, it was really good!

Pizza here tonight. I'm thinking a vegetarian pizza, with caramelized onion and sauteed peppers. Nothing fancy. Although I may do a stuffed crust.

Yum! I'll have to try that. So many ideas on this thread.

Breakfast: Thomas wheat english muffin toasted with butter and molasses sugar. Half a diced fresh pear.

Lunch: 1 cinnamon crumble caramel apple that I got at Walmart for $1! I diced it up and got rid of the stick & core. Also the other half of that diced pear, saltine crackers, and vanilla almond butter mixed with dark chocolate peanut butter. I microwaved a few pieces of the caramel apple to see what it would taste like hot and it was so yummy, like a warm apple crisp!

Dinner: My famous huge dinner plate salad. Swiss chard, onion, tomato, cucumber, orange bell pepper, avocado, diced crystalized ginger, pickles, dried cranberries, cashews, flaxseed/chia seed, half a fruit cocktail cup, shredded parmesan cheese, crushed saltine crackers, orange french dressing. Also cooked up a vegetarian hotdog sliced in coins in olive oil, cilantro, garlic parsley salt, jalapeno pepper powder, Texas BBQ sauce.

I was convinced that she had a stroke,and am so grateful that she didn't.She's got an inner ear disorder but not an infection,and so all the strange things she'd been doing was because she's incredibly dizzy.So,he did her blood work,which came out perfect,gave her a steroid shot for the inflammation and put her on meclazine.We did find out that she's completely blind now.Bless her heart...,she's a double dapple girl,13 yrs old...we've had her for 11...somebody dumped her and a friend of mine picked her up and took her to my vet,and he called me.She is deaf,has been blind in one eye and a bad cataract in the other She is such a joy...so sweet and loving.She was a bit more mobile today than she has been,so I take that as a good sign,and her appetite is better today too.So that's her story as I know it...thank you for asking:)

Bless my neighbor's heart...she came down this morning on her way to work with half a crock pot of ham and beans for us to have.So...I fixed a pan or cornbread and that's what we had for dinner,and I sent half of my cornbread up to them so she didn't have to fix that when she got home.So good!

Good neighbors are hard to find but when you do they're as good as gold! :hugs:

Since I scratched the scrambled eggs with chopped veggies last week I decided to make them tonight with a toasted pumpkin spice bagel. DH made a sandwich with the leftover roast from the other night on a brioche roll and tater tots. More honeycrisp apples for dessert.

Since I scratched the scrambled eggs with chopped veggies last week I decided to make them tonight with a toasted pumpkin spice bagel. DH made a sandwich with the leftover roast from the other night on a brioche roll and tater tots. More honeycrisp apples for dessert.
We have known them since she was a little girl...she and her family are like family to us.They are treasures for sure!

lizzie lizzie I'm so glad Olivia is OK! She sounds like such a sweetie. I knew you've had her for quite a while. Such a precious little girl.

Well, tonight I'm thinking of mac and cheese with tomatoes. It's a rainy, chilly day and we could use some comfort food.

Breakfast: Aldi Cinnamon Raisin Granola, with one diced fresh pear, and Silk Dark Chocolate Almond Milk. It was good, but very chocolatey! I think I will try it again but with some vanilla almond milk added to the chocolate one.

Lunch: Cinnamon Crumble Coffee Cake, Cinnamon Bundt Cake, Saltine Crackers, Target Vanilla Almond Butter, Peanut Butter & Co Dark Chocolate Peanut Butter. I don't like cake! It was way too sweet. I think I prefer pie.

Dinner: Huge dinner plate salad again- Swiss Chard, onion, tomato, carrot, cabbage, walnuts, dried cranberries, one hard boiled egg, vegetarian marshmallows, crushed saltine crackers, guacamole, shredded parmesan cheese, shredded mozzarella/cheddar cheese blend, diced crystalized ginger, orange french dressing.
