I had Rotolo - tricolor pasta sheets rolled with ricotta, spinach, mozzarella, and marinara sauce
That sounds amazing.

Yeah, hummus doesn't have much protein.
Huh. I thought chickpeas were high in protein?

I just stir fry the kale and tofu and add olive oil and salt.
How long do you cook tofu? I cooked mine for 8 minutes on Medium, but it never got crispy.

For lunch I had tofu cooked in olive oil, salt, pepper, hot sauce. I put that on a Kaiser roll with mayo, lettuce, tomato.
For dinner I had an Amy's Burrito--black bean, rice, tomato, bell pepper, onion, cheese. I put hot taco sauce on it. It said to microwave for 2 minutes, but it was still cold in the middle. :rolleyes3:

Um...not sure, but I have to decide pretty soon. I'm considering hot dogs, but grilling them on the George Foreman grill and having them with mustard and pickle relish, which was my favorite before I became addicted to the cheese and onions...I just dunno.

That sounds easy enough. :)

They do. But a serving of chickpeas is probably 1 cup, which is way more than 2 tablespoons of hummus.

Leftover Rotolo from last night's dinner out - the portions were huge so I was able to save half and bring it home. :thumbsup: I still have pumpkin bread left from when I baked over the weekend so we both had that for dessert plus a honeycrisp apple.

I cook mine for about 8 minutes on Medium, but I can't cook. If you want it to get crispy you will have to cook it longer or at a higher temp. Maybe Neely can help you with cooking tofu. I cannot cook and I am afraid I will burn it. It would taste better with onions, peppers, etc. but with arthritis in my hands and knees I can't do all of that work.

The produce section of my supermarket has a good selection of chopped, sliced, diced, riced fresh vegetables - onions and peppers, yes, but also carrots, squash, riced cauliflower, spiralized zucchini and more. I've not tried them but it could be an excellent solution for you. And what you don't use immediately could no doubt be frozen for another time.

Riced cauliflower and spriralized veggies are available at my local supermarket. I get the diced onion because I hate dealing with onions.

Some of my stores have salad bars with vegetables and fruit already diced up. I will buy them sometimes but they usually go bad and end up in the trash. I like the mushrooms and onions the best.

Someone in the house had a tooth pulled yesterday, so I'm putting together a "soft food" one pan dinner of canned zucchini (heh, I'll just bet those are soft. I've never purchased these before but saw them on the shelf and said ok, sure... lol), noodles, ground turkey, mushrooms, sauce.

Tonight I'm having chicken nuggets. I could care less about the chicken nuggets, but I'm craving honey mustard dressing, and I don't have any salad fixings! SO..chicken nuggets do the trick nicely! I shall do a veggie...mostly to fool myself that I'm eating something healthy.

i'll have hot dogs (no bun),
But...but...HOW DO YOU KEEP THE CHEESE AND ONIONS ON THEM WITHOUT A BUN???
