It varies a lot from country to country.
What about listing? Is it still allowed to just list 'Gift"- otherwise, the more specific you are on customs forms- the more it gives away?

You can select a specific country to get more details. I've shipped to Mexico before and that can be tough. I shipped a package last week that had something in it that contained batteries and I had to open the package at the counter and take that item out. Batteries are not allowed under any circumstances.
If you are shipping to another country, ship early. The guidelines they give you for how long it will get there are for normal conditions, not during Christmas. Also, the US has changed how they handle international shipments at the counter. Every line item on your customs form has to be entered into the computer by the clerk at the counter. If it is a long list, it's probably best to go there during a time they aren't too busy.
