Cat Reintroduction after a fight

For those that have experience with this are there any tips for knowing when cats are ready to interact more ? Right now we are using a baby gate the keep them separated when we can’t watch them . They eat together fine with no issues they even groom each other before hand. . They have touched noses at the gate and seem fine . I’m still afraid to give them too much time because my Tortie will run at my Tuxedo form time to time when she enters a room and she still hisses once in while . I don’t want rush the process but I also don’t know if I am l moving too slow . I’m just so confused as to why sometimes they are fine and others it looks like there will be another cat fight
