Last night was toasted cheese and tomato sandwich.
The night before was an egg burger. (fried egg and cheese on a hamburger bun)
No sure about tonight yet, but probably the pasta and broccoli I didn't make over the weekend.

Probably Cheddar Jack brats with onions and peppers. A simple chopped salad. Peach cobbler for dessert, but we'll probably enjoy that with a scoop of vanilla ice later on tonight while watching tv.

What does Kale taste like? I have never had it.. afraid to try it because of all the negative comments: tough, cannot chew, etc
Kale is a bit denser than other lettuces, somewhat like its cousin cabbage, which is why I tend to cut it fairly small. Some folks find kale to be a bit bitter, though I personally think it’s less bitter than arugula, which tastes like dandelion to me. I do like the texture of kales ruffled edges when mixed in my salads. I believe Costco even uses it in their deli quinoa. I had a friend who tossed it with olive oil, seasoned, and roasted it for a crunchy snack.

Last night we went out for ramen. We both had the garlic style, and we will both be smelling like garlic for a while! 😂
I was so full, my goodness, who’d a’thunk a bowl of noodles could be so filling? 😅

Kale has fiber and is a good source of protein. When I have it in a salad I usually mix it with other greens. My daughter steams it to make it softer and easier to chew.

C catapault Best of luck on your upcoming knee replacement. We'll be thinking of you. :grouphug:

I was munching on trail mix from TJ's this afternoon so not too hungry. I'm just going to have a sweet potato with broccoli and cauliflower on the side. I'm making bbq chicken for DH with Yukon gold baked potatoes and side salad. Raspberries for dessert.

Supposedly massaging kale breaks down the tough fibers and makes it more tender. Baby kale is tender and doesn't need to be massaged. What's the Deal with "Massaging" Kale?

I had last frozen subscription meal for dinner. I got fresh corn and green beans and blueberries from the farmer's market today. I'll have the green beans tomorrow. I also got maple syrup. It's made in the next state over so not really local.

It's definitely thicker than lettuce, but not too hard for me to chew. It tastes green?

Arugula tastes super peppery to me.

felt like korean food so we took a drive to closest korean market to buy the stuff to make a spicy tofu soup
Yum, that sounds delicious. :yummy: I go to a vegan Korean restaurant that makes a stew which is really more like a soup. It has miso, tons of veggies, tofu, seaweed and dumplings.

DH went to a farmer's market today and picked up a cinnamon raisin walnut bread from one of my favorite vendors so i made a pb & j sandwich on it for dinner.

I have tried and tried to convince myself to like tofu, with notable lack of success. Near as I can tell, God invented tofu so vegetarians know what it's like to eat Spam.

dinner was nothing more than a hot dog with onions and relish.
What? No cheese? ~collapses in a whimpering pile of goo~

Lunch was scrambled egg, pancakes, and apple crisp. Dinner will be a cheeseburger.

A local bakery sets up a table at the farmer's market every week. I browsed the last time I went but nothing appealed to me. And the prices were :eek3: And the line was so long. No idea how people can afford expensive baked bread and cookies.

Dinner... not sure. I have leftover green beans. I have corn that hasn't been cooked yet but can keep another day or two. I do have a bag of frozen ravioli so I may make that. I had to do a deep clean before my new fridge was delivered and haven't fully restocked yet.

Well if I was a meat eater I would like spam because I love tofu. It's low in calories and high in calcium and protein. It's the other white meat. Sixty years ago when I ate meat I had spam and I don't remember
it being so bad. I guess I did not know what it was made from. I really liked fried chicken and baked ham and I still remember what they tasted like.

Last night I had mixed vegetables and pasta with sauce.
