What's For Dinner? - 2021

Dinner tonight was Salisbury steak (hamburger, basically, but done in a different way) - browned the ground beef patties, set aside. Saute sliced onion and mushrooms, return patties on top, cover pan and saute on low heat for about 20 minutes. Jasmine rice. Microwave steamed asparagus, skinny little tender spears. Nice dinner.

Dave's Bread is good. I had it toasted with butter, with Sharp cheddar and I just had a PB&J with it. I can't justify paying that much for a loaf of bread on a regular basis though.
That's how I feel too. However, I still might buy it from time to time as a treat.

Not sure, as per usual, what I'm having tonight. But last night was a veggie hot dog with onions and mustard. 🌭

I don't know if I mentioned this before.....Rick's BIL (I've talked about Sam before, we do sauerkraut together and we've made sausage) smoked some outstanding bacon a few weeks ago and gave us two pounds. It's decadent! We've been working our way through it. Last night we finished it off with BLTs for dinner. Sam has been spoiling us for smoked sausage and bacon. He simply does a perfect job. Store-bought just doesn't compare anymore.

Tonight I'm thinking mac and cheese. Maybe with tomatoes. We eat a lot of mac and cheese. Rick just loves the stuff.

I've never tried a Fresno pepper! I'll have to look for it, maybe I'll find it dried or powdered online. 🌶

Oh shredded apple sounds good! I don't have a potato grater, but I have a fancy cheese grater that does all sorts of shapes. 🍎

Lunch: Veggie stir-fry, but it failed miserably. I'm getting this gross salty fishy taste, even though it's vegetarian. Maybe I need to raise the heat to medium high? But it spits all over my shirt when I do.

Dinner: Mashed potatoes, vegetarian meatballs, and mom made this horrendous spinach, onion, garlic, sweet cream coffee creamer abomination. It was so runny and just blech. I need to keep insisting on making my own meals. 🤮

Just doing lunch & dinner this month. I may go back to eating breakfast in June. We'll see.

I think I must be doing something wrong because the same thing will happen to me! Recipe will say to heat up pan and add oil when pan is hot, but if I do, it goes sizzling and spitting everywhere! So I add the oil before I heat up the pan.

I sure missed your menus.

For lunch I had stuffed shells filled with cheese and marinara sauce and a nice salad. I didn't go down to dinner tonight. There was nothing I wanted on their menu and it just gets too crowded at dinner. I had Amy's lentil soup and half of a cheese sandwich with DKB bread, provolone cheese, dill pickle chips and vegan mayo.

Well, in the process of moving things from the old freezer to the new one, I unearthed stuff I had no clue was down there, most of it freezer burned and scheduled for a major toss-out tomorrow after the trash has been collected and the dumpster is empty...HOWEVER...I also unearthed a perfectly good package of English muffins, so I'm thinking scrambled eggs and English muffins tonight. Easy, quick, and GOOD!

You know, sometimes it all comes together. Last night, I made mac and cheese with tomatoes in the FG. It was perfect, just perfect. I even got a couple crispy edges; I love crispy edges on mac and cheese, not too crisp, but just enough. With a salad and then a couple of cookies for dessert.
Probably leftovers tonight. Going to be a busy day around here.

I have some jumbo ones in the freezer for sandwiches. The regular ones are so small!

Lunch: Practiced with a Knorr pasta sides packet. I had the heat too low and it didn't thicken up. Will try again tomorrow. I forgot which notch to put it on, notch 2 was too low for simmering!

Dinner: Huge dinner plate salad- romaine lettuce, spinach, tomato, cucumber, bell pepper, hard boiled egg, dried cranberries, walnuts, dried figs, dried dates, thousand islands dressing, shredded cheese, flax/chia mix, potato sticks. Yuck! I used to love potato sticks when we had them on the salad bar when I worked at Pizza Hut. Now I think they are nasty. I prefer corn or vegetable chips. Or croutons.

I'm to the point where I'm tired of food and miss dairy, and I'm not even sure it's making a difference in J's digestive issues. I'll see what her pediatrician thinks next week.
Did you have J's pediatrician appointment yet? If so, what did they say? I hope you can put some dairy back in your diet.

Dinner was one of my bowls with brown rice, broccoli, shredded carrots, green onion, stewed tomatoes, black beans and sliced avocado on top. Trader Joe's dark chocolate almond butter cups for dessert.
