Tacos - corn tortillas filled with the last of the Costco rotisserie chicken (white meat, shredded), shredded Jarlsberg (hey, it was the chunk cheese I had), finely chopped onion, shredded lettuce, homemade salsa verde. Side of black beans and corn pumped up with Goya sazon.

Today was a very busy day...elderberries have to be processed and I had a bunch of cukes to prepare and get soaking in lime water,sooooo....he had leftover pancakes and bacon and I had some leftover rice and chicken tenders and that was it!

When I first became vegetarian, a co-worker lent me her Moosewood Restaurant cookbook. This is one of the recipes I ended liking and having often. Sliced apple, walnuts, raisins and cheese on bread, which you toast. Pretty easy, and yummy too. And good on hot days like today when the toaster oven comes in handy. It works best with a thicker bread, but today I only had thin sliced loaf.

Sliced apple, walnuts, raisins and cheese on bread, which you toast. Pretty easy, and yummy too. And good on hot days like today when the toaster oven comes in handy. It works best with a thicker bread, but today I only had thin sliced loaf.

I am going to have spaghetti and green beans. If I knew how to pickle the green beans I would.
i make pickled green beans often. i use the 'simple' method. i open a can of cut green beans and drain off the water. then add them to a jar of pickle juice -- that i've eaten all the pickles out of. i put a piece of masking tape on the lid of the jar, and use a permanent marker to write 'done on xx/xx/xx' on it (so i know the date when the green beans will be pickled enough. i give them 3 weeks, sitting in the pickle juice, stored in the refrigerator. i've made pickled green beans using sweet pickle juice, and dill pickle juice -- both taste really good, to me. :yummy:


i'll have a peanut butter and jelly sandwich, and dessert will be a slice of It Won't Last Cake. :D

That looks good rubysmama rubysmama . I'm not a walnut fan, so they can be omitted. You know I'm pretty sure I have the Moosewood cookbook, somewhere in my mess. I know I have the Frog Commissary cookbook, but I think I have Moosewood, too. I'll have to look for it.

We are going to Rick's 50th class reunion tonight. He's going early because he's the MC. I'm going for the dinner and will come home afterward. I think he registered both of us for some kind of beef entree. There's a huge cake for dessert. That's all I know.

Thanks for the instructions on how to make pickle green beans. They really sound good.

Well...did the shopping this morning. The pantry, fridge and freezer are stuffed full, and I shall be having...left-over pizza from last night!
