Those green beans were just old. Young green beans, particularly "blue lake", do not have strings. Also "wax beans" are yellow and I have never had strings on them. I hate those strings too, I feel as if I had hair in my mouth.
What is cajun? I mean, I've had cajun style foods, but I'm guessing this is a specific dish? And I LOVE spinach too. Raw or in a skillet with a little olive oil, garlic, and a small touch of lemon juice.

We had lunch leftovers, spinach fettuccini with tomato sauce with some scrambled eggs with mixed diced vegetables, cheese, corn chips, and cajun (which my boyfriend calls "bachelor food").

Brussels sprouts are a type of cabbage (a cruciferous veggie) that grows a bunch of tiny little heads on a stalk. You only eat the tiny heads. In the Northern hemisphere it's a winter veggie like the rest of the cabbages. Once cooked they turn out rather sweet. The reason most kids hate them is because most people just boil them in water until they are mush and do not taste of anything.

What makes you think Brussels sprouts are a Christmas food? It is a winter vegetable like the rest of the cabbages but these days you can have any veggie you want any time of the year. Depending on where you live here in the US we have had crazy weather. I live in Southern California and we have not had what we call winter. Then it got "cold" ( i.e. 40F) for two weeks in February, then it got warm (70F) but cooled off at night (50F) and stayed that way until last week when it was 101F for 3 days, and nights were 68F but has finally gotten down to the famous SoCal weather of around 72F, cool 65F at night. We keep forgetting that this is really desert. So until the heat wave struck the winter veggies were hanging on although tomatoes and peppers (summer veggies) were planted in Febr and now are setting fruit. The in-between veggies such as green onions and Swiss chard are still growing strong and if you don't have your own garden you can find both winter and summer veggies on the farmers markets. We even have cherries and apricots already and those don't usually come in until the middle of June. Global warming surely has done something weird to the weather in SoCal.How come everyone is eating Brussels all of a sudden. It's not Christmas.

One of my friends swears by brussel sprouts as his post-workout food. My boyfriend hates cabbages because he's Dutch and the way his mom cooked was, and I quote, "you put a head of cabbage and a potato in hot water and it's done", but he says my mom is a wizard for the way she cooks. Maybe I'll pick some up next time I see them on sale.

I love CostCo food! Even the cafeteria area there is delicious and inexpensive.. and they serve their ice cream cones like, a foot tall! Mmmmm...We had dinner at Costco today.Yup, there were SO many yummy sample tables and by the time we left, we were full.So, just a small salad for us tonight for dinner.

If you cook Brussels sprouts too long they will give off a smell like rotten eggs due to their sulfur content (no wonder kids hate them), so be sure not to cook them too long. I slice sprouts in half long ways and cook them, cut side down, in butter. On med-low with a cover. Everything tastes good cooked in butter, lol! When the tip of steak knife goes into the center of the biggest ones with no resistance, they are done. Right at the end, I'll toss in some chopped garlic and sauté that for about 30 seconds, and salt and pepper. Sometimes, I throw a little lemon juice or white wine in the pan. They get crispy around the edges and soft in the middle. Yum! They kind of taste like broccoli, but with a different texture. My husband teases me and says I negate any health benefits from all the veggies we eat with the all butter I add to everything. Heehee! Actually you're doing yourselves a favor by adding butter, because eating fat is necessary for the body to absorb fat soluble vitamins. Brussels sprouts are packed with Vitamin K, but eat them without any fat and the vitamin K goes to waste! So they are more healthy with butter than without, haha!My husband teases me and says I negate any health benefits from all the veggies we eat with the all butter I add to everything.
