I don't know! It's just me this week and I don't know what I want to do. I'm thinking of making a large salad of fresh produce and throwing in a can of chilled tuna and some fat-free 1,000 island dressing. It's quick, it's simple, and I'll end up sharing most of the tuna with the cats anyway. And maybe a Slim-a-Bear ice cream sandwich for dessert.

We used our Griddler which can also be used as a panini press -I had one sandwich made with Dave's Killer Bread low calorie/lower carb version with corned beef, roast beef, lower sodium cheese, bit of onion and thousand island dressing, salad, green beans, and a few dark chocolate covered nuts for dessert (a half serving).
I love Dave's Killer Bread....especially the Blues Bread. In fact I just made a tuna sandwich to take for lunch using it!

LOL..I'm trying a slice of the blues bread tonight as my carb/dessert :)  Also having salad, spinach and barramundi cooked with lemon, butter and capers.

We had pan fried salmon fillets, rice and steamed asparagus. Very yummy, and I'm pleased with myself for bothering to cook a healthy meal even though I was tired. It didn't take that long either.

I'm making Pizza Chicken tonight, which is chicken breasts slow cooked with pizza or spaghetti sauce with mozzarella cheese melted on top. Yeah, it's kind of cheating but it's SO good! Served with baked potatoes and broccoli and a small salad.

I didn't do a roast today, I did a chicken with salad and potato wedges, totilla wraps and dip, very nice.x

Ruthy, I'm curious -- do most people in England eat roast every Sunday?

The more traditional old people here in the south (US) do that too.

I think most people do, I love it, its really the only chance that we get to sit down together as a family and eat, its even better now I have a dishwasher lol.x

Tonight is going to be stir-fried bok choy with ginger and garlic for my vegetable. Don't know what's happening with meat, I might have a deli roast beef sandwich or make my heavenly scrambled eggs.... they're made with heavy cream because calories are irrelevant. :lol3:

I'll also be putting some white bean chicken chili in the slow cooker for tomorrow. Putting tomatillos in it this time so it should be interesting.

 Oh my gosh, that sounds delicious.

 I am making rump steak, I fry it, love mine really rare and bloody, dh likes his cremated
 I'm having a jacket potatoe, salad and creammy peppercorn sauce with mine and dh is having pasta and tomato and herb sauce (he likes to make things difficult by not liking what I do!! LOL)

Tonight I'm making my favorite pizza-ish food that I have only seen in one pizza place, in my hometown. The food is called a pizelli, the place is called Red Devil in Holly, MI.

Homemade pizza dough topped with mozzarella, provolone, turkey, and ham, cooked like a normal pizza. At the same time, you're cooking another thin pizza dough to put on top when you're done. After cooking, top with lettuce, onions and a healthy spattering of italian dressing. Place the other pizza dough on top, and voila! Those are the base ingredients. Sometimes I make it more salad-like with cucumbers, tomatoes, and olives, and I make it with less cheese and meat. Other times I make it more pizza-like with more meat and cheese, and adding butter and garlic to the dough. It's a very handy meal to make when you want something your kids will love as much as pizza (I know I asked for pizellis every night growing up vs every other night asking for pizza) that is still pretty healthy. Since I finally tried out our breadmaker, I am definitely making this treat much more often. The only thing keeping me from doing so before was that my wrists get sore from all that dough kneading.

My husband would love this recipe. I could do without the mussels :lol3: but that does sound really, really good :clap::clap::clap:

Last night, I made a spinach frittata, using egg substitute, and we had some yeast rolls from the freezer along with a warm fruit compote. It was really chilly last night, so that warm compote really hit the spot.

Trying a new recipe tonight, using apple chicken sausage. Should be good!
