I made a big pot of split-pea soup for yesterday's dinner, so we'll be eating that again today, with a salad on the side.

Leftover roast veges and probably just some frozen chicken Kievs. I roasted a big pan of veges the other night and it's handy having them all done so we just have to reheat them.

We are having chili and garlic toast. Easy dinner tonight. I already had the beef cooked with onions, so I just had to throw it in a pot and added some garlic, 2 cans of tomatoes, red and white kidney beans and spices.

We are going out to a family type restaurant with friends tonight. Then getting together to play music.

Coffee-crusted grilled pork tenderloin with sauteed green beans and red pepper slices. Dear Richard has asked for a pan of peanut butter and chocolate brownies, too.

That sounds delicious. I haven't ever had a coffee-crusted protein, though I've seen chefs do it on TV and thought it would be good. I should try that.

Tonight I made lasagna roll-ups of ricotta and mozzarella cheese, roma tomatoes, and fresh basil topped with tomato basil sauce. I also made chocolate fudge cup cakes.

We had an early dinner - watching our beloved Seahawks in the NFC Championship game.  I made a batch of Roasted Cauliflower and Leek soup using some frozen homegrown leeks, and homemade chicken broth.  Big salad, and then using Udi's gluten-free French Baguettes, made subs with 3 kinds of Italian meats, a bit of fresh yellow bell pepper, teense mayo, and one slice provolone cheese. Hit the spot.

I have a small pan of lasagna in the freezer that's calling my name. It's leftover from the Saturday between Christmas and New Year. I'm going to throw together a loaf of cheddar cheese bread to go with it. And a Caesar salad. I figure til I'm done making the bread and have it baked in the oven, the lasagna should be done, too. There are some brownies leftover from Sunday, unless Rick took them in his lunch today. 

I really don't feel like cooking tonight, so that will have to do.
