I'm home from work today with dd who has bronchitis! So I had a roast, marinaded in teriaki sauce, and it is slow cooking with baby carrots. And although mashed potatoes sound good, I'll just add some frozen variety veggies to round out the meal.
I haven't cooked too much lately, because like Vespa said, by the time you cook it, & clean up, it is just a lot of bother! If I just microwave something or pick up a pizza the clean up is QUICK! But I'm overweight, and dh's cholesterol is rather high, so I need to get better at it.
