Tonight I'm making chicken enchilada's with Spanish rice.


The enchilada recipe is in the fundraiser/recipes area.


It's gonna be soooo GOOD!

No no, it's my recipe.

I didn't know there was another recipe. I posted my own recipe in Main Dishes (the enchilada's are baking now...)

A steak sandwich... with provolone cheese and mushrooms. The steak was marinated in red wine, garlic, olive oil, salt and pepper. I braised it in the marinade and then added the mushrooms to soak up the residual fat.


I got lazy at the end and microwaved them to melt the cheese. My Mother on the other hand would have put them under the broiler.

Oh that's right.......well, it doens't look bad.........as a matter of fact, it looks pretty darn good!

So does your chicken and stuff, Eithne.

Steak sammiches look good, too.

For us, ham, new potatoes with fresh parsley, and assorted "experienced" veg with some sauteed mushrooms and onion to extend them. Tasty, I'm sure, but perhaps not worthy of a picture -- we'll see.

I just made a crockpot of baked beans, and a vege pizza to take to my sisters picnic tomorrow;.......
