What Happens If I Hiss Back?

What would happen if I hiss back at a large orange tabby that I just provided with some food in the street?

Hissing is usually telling a cat to “back off” or warning them that if they don’t you will attack. I sometimes hiss at my kitten if he play bites me so hard that it hurts. It gets him to back off. If the cat who is hissing at you is a stray he’s probably doing it out of fear. He’s probably saying “don’t get too close cause I don’t trust you yet”. I would only hiss at a cat if it was necessary and I had a reason to do so. I wouldn’t do it just in retaliation to a hiss from them. It may just make him more fearful.

Yeah, I figured it would be a horrible idea, but would he have attacked me or something?

That's hard to predict. If he hissed at you he was probably warning you to stay back or he might attack if he needed to. So if you did something to make him feel even more threatened he may have.
