She kinda looks like a American Shorthair i'm just not 100% sure she is one

I'm very sorry for your loss. Is Athena the large cat in the picture with two cats? I would describe Athena as a seal lynx point domestic shorthair. Most cats aren't any particular breed.
American Shorthair and domestic shorthair are not the same thing, although many people confuse them. The American Shorthair is a pedigreed breed that was originally created many years ago by combining British Shorthair with domestic shorthairs; since then, it has been selectively bred towards its standard. It has a somewhat stylized appearance at this point, and doesn't come in your cat's color (seal lynx point).
