Methionine is an amino acid. So, since muscle meat is a complete protein containing all the necessary amino acids, it is a natural source of methionine.
I don't know all the details of how it works, but I have done a lot of reading about cats and diets, and one of the basic principles is that more meat = more acidic urine. It also stands to reason that a diet that mimics their natural one (mostly meat) would make the cat healthier - including a better urine PH.

If he has allergies, I'd say it doesn't matter whether he eats wet or dry; what's important is that he be put on a specific allergy food and eat nothing else. I personally recommend the Natural Balance Green Pea, which my cat loved the taste of and seemed to do very well on.
