Chicken is "the clean combination of flesh and skin with or without accompanying bone, derived from the parts or whole carcasses of chicken." If you're not able to figure out the difference between "chicken" and "meat by-product" from the definition, I don't really know what to say to that. Its fairly self explanatory IMO, and should be obvious that chicken breast/legs are more nutritious protein sources than unnamed source poultry feet, heads/beaks, and guts (that's what viscera means).
