Come on - I know you've all got something that you made up that you are SO proud of!! Let's share our original recipes...as long as we're not giving away any closely kept secrets...
Here is one that I am especially pleased with...
Mushroom Wraps
Ingredients:
300g mushrooms, sliced
Couple of big tablespoons of whole egg mayonnaise
Handful of pine nuts
Cajun seasoning
Two sheets of rice bread (you know - thin and square, like lavash bread).
Method:
Fry the mushrooms in butter until starting to go soft. Add the pine nuts and cook until toasted. Shake in cajun seasoning to taste. Take off heat and stir through whole egg mayonnaise. Spoon into the middle of the bread wraps and fold into packages. Place packages back in pan and sear until sealed.
And voila!! Quick, easy, AMAZINGLY delicious and healthy and a great fast snack!
