Easy question this morning: What are your plans for this weekend? Doing anything special?
Saturday night, Rick and I are going out to dinner with my sister and BIL and my brother and SIL. We are celebrating my sister getting her doctorate. That was a lot of hard work and a lot of sleepless nights, but she did it. Kudos to her....she deserves them. I'm making chocolate cupcakes with whipped peanut butter frosting for dessert and everybody's coming back to the house for cake and coffee. Cupcakes instead of a cake; they're easier for everybody else to take home.
On Sunday, we are going to Rick's sister and BIL's house for dinner. This is the German dinner that Sam is making with our homemade sauerkraut. Lots of roasted pork with the sauerkraut, onions, apples, and spices. He is making a pumpkernickel bread to go with. I was supposed to do something "German" for dessert and I'm considering making Windbeutel, those cream puffs that @Kat0121 mentioned (thanks, Kat!). I can make the puffs and the filling ahead of time and take them separately, then put the puffs together right before we eat them. I'm thinking of a lemon curd, though, instead of a regular cream filling.....we all love lemon and that would be rather refreshing (maybe with a little chocolate ganache drizzled over the top)....yes, chocolate and lemon do go together, beautifully! I'm also going to make Linzer bars (thank you, @Paiger8) , simply because I just love raspberry and this is a chance for me to make them and not have to bring the leftovers back home.
I should add that making the cream puffs depends on the weather; it there's even the slightest chance of rain, I'm not going there. Cream puffs are like meringues for me when it rains.....does not work; they simply get sticky and it doesn't matter how long I bake them.
Other than that, it's running errands: banking, Target, etc. A bit of house cleaning, the normal stuff.
