My fairly large cats are real kickers, and that dang clay litter goes everywhere unless we use really large and/or deep boxes. I'm wondering if the pellets also go flying out of the boxes. Do I need to use a deep box for the pellet litter or will they be okay with one of the smaller ones ready-made for the pellets?

So hard to answer each cats litter box habits are so different. I can tell you that I use a thinner layer of pine pellets than I did of regular litter so you gain a little box height that way. When I do find a stray pellet because of their bigger size it’s simple enough to just toss back in the box. I use the All Pine litter box and love it !

pellets are better than other forms of litter in terms of tracking, but if it is of concern you may want an anti tracking mat, just to be sure.
