Here is a dessert type salad that is so yummy! I had it at a friend's house for Thanksgiving and made it at Christmas.
Watergate Salad
1 Tub of Coolwhip
1 box instant Pistachio pudding
1 can crushed pineapple
1 small bag of toasted coconut
Mini marshmallows
Chopped nuts (I used walnuts but any type of nuts will do)
Put cool whip in mixing bowl and add DRY pudding mix and mix with spoon until completely mixed.
Add can of pineapple with the juice and coconut and mix again.
Add as many of the marshmallows that you want and spread in the container you will be taking it in. Topped with the chopped nuts.
Variations:
Mix the nuts in the dessert instead of on top.
Use chocolate pudding mix instead of pistachio. I haven't tried that but the gal that gave me the recipe has and said it was good too.
Do you have a certain type of food you are responsible for (ie, entree, dessert, sides, etc)? If not, I would go for a side. Usually at most potlucks I've been to the organization supplies at least a few entrees.
For sides, it always seems like there are a ton of scalloped potatoes and green bean casseroles. One side I like to make is broccoli casserole, and it's as easy as can be. Just boil a bag or two (depending on how many people) of frozen broccoli until almost done. Put a couple spoonfulls of butter in the bottom of a casserole dish, add cooked broccoli and diced velveta (works better than shredded cheese) and sprinkle crushed ritz crackers over the top and bake until cheese is melted. It's different and people seem to like it.
Also, if doing an entree, get a decent size pork roast and slow cook it either in a crock pot or in the over (covered) at low heat until it's falling apart. Pull apart then add barbeque sauce and voila..pulled pork sandwiches. Just organize with someone else to bring the rolls.

I'm not sure what you're responsible for: entrees, sides, etc.
Do you want to use your crockpot? If so, here's something that can thrown together fairly quickly. And they're good.
Crockpot Baked Beans
1-1/2 lb. ground beef
1 med. onion, diced (I use a nice large onion)
1 lb. bacon cut into 1/2-inch pices
Brown beef and onion, add bacon and cook until soft. Drain and add to crock pot.
Drain:
2 cans dark red kidney beans
2 cans butter beans
2 cans pork and beans
Add:
1 c. brown sugar (I use not quite 3/4 cup)
1 c. white sugar (I use not quite 3/4 cup)
1/2 c. molasses
1 c. ketchup
2 tsp. salt
2 Tbsp. vinegar
4 Tbsp. dry mustard
Mix everything together in the crockpot, turn on high. This should cook for about 30 minutes, then turn to low for about 5 hours. Stir occasionally, just to have a little taste.
Note: They can be sweet, esp if you're not used to sweeter baked beans. I've cut the sugar down a bit for us. You could probably decrease the amount further, if desired.

This is a recipe that my family and friends seem to like:
Italian Sausage Bake
12 oz. penne pasta, cooked
1 lb. mild Italian sausage, casings removed
1 c. chopped onion
2 tsp. olive oil
15 oz. tomato sauce
14.5 oz. can diced tomatoes with garlic
6 oz. tomato paste
2 c. shredded mozzarella
½ c. water, chicken broth, or wine
Cook sausage and onion in oil. Stir in tomato sauce, diced tomatoes, and paste with the water. Combine and cook 10 minutes, stirring occasionally. Combine the pasta with the sauce mixture. Spread in 13 x 9-inch pan. Sprinkle with cheese. Bake at 350 degrees for 20 minutes or until cheese is melted.
Mmm, good ideas so far. I think I'll go with a side type dish, as the mains always seem to be covered, and last time I brought a dessert and hardly any got eaten.
Id do a big bowl or a couple of slightly different salads like 2 or 3 min salads so to speak or a big bowl of tuna pasta salad
which is
Pasta (any type i have used wholemeal pasta as its more healthy but just as nice)
Tuna - drained and flaked out or tin or cooked and flaked off
sweetcorn - again drained, if wanted to try cooking it on the cob then adding think ill try that next
mayo or salad cream whichever is your preference
and actually cucumber is quite good in it, believe it or not its not to heavy going
