I think this is one of the things they teach them in cat school, in the "food" module of the "How to Aggravate Your People" course. Some cats, like Ireland, who's settled in on my lap right now being a total sweetie, totally ace that part of the curriculum.
In all seriousness, though, cats just seem to have a propensity for being fickle about their food. Either that or eating the same old thing every single day for years at a time.
